Here we come to letter H and for H i have chosen  Haiti . Haiti is also called as Republic of haiti is a Caribbean country. People here speak French and haitian creole. The Haitian style of cooking is greatly  influenced by French , african, spanich and middle eastern. I don't know more about the cuisine but I chose most popular dishes from this country, the national dish of Haiti rice and beans and a coconut jello pudding called Blancmange. Balancmange is coconut pudding dish which is jelly like I wanted to make them for this country. The rice and bean has a addition of coconut to it and I love the taste of this rice bean. I always love eating burritos from chipotle which usually wrapped with  rice and beans   which is lemon flavored and i felt the haiti rice and beans are almost similar but the addition coconut makes it all different. For the second dish I chose this coconut jelly you might call this super simple to make and I loved the coconut flavored jelly a lot . Traditionally they do add evaporated milk too even the jelly But I have made it with only coconut milk.  I adapted the coconut jello recipe from global table adventurer . Its been an wonderful  journey doing marathon till now we am so learning about many countries I never knew exists in map .. Will come up the next letter I tomorrow.So with no further ado lets move on to the recipes.

  Cooked Basmati rice - 2 cups
  Black beans - 1 Cup ( I used cooked canned beans)
Haitian Rice and beans   Coconut Milk - 1 cup ( thick)
  Cinnamon stick - 1 No
  Clove - 2 No
  Onion- 1 No
  Garlic paste - 1/4 tsp
  Oil- 1 tbsp
  Hot pepper - 1 no ( I used green chillies)
  Pepper pd to taste
  Thyme - 1/4 tsp
  Salt to taste
  Turmeric - a pinch ( optional)
  • In a pan heat oil , add cloves, cinnamon stick.
  • Then add garlic paste , hot peppers and saute.
  • Add onion and saute them till translucent.
  • Add the cooked beans with little vegetable stock or the stock in which the beans are cooked.
  • Add thyme, pepper pd,salt and  coconut milk.
  • Cook them till the till the excess moisture evaporates and the curry comes together.
  • Mix in cooked Basmati rice in the prepared beans curry and serve them hot.
  • I squeezed lemon in the end to get a little tanginess But traditionally no lemon is added.

Blancmange (Haitian Coconut Jello )

Haitian Desserts  Ingredients

  Coconut Milk - 2 cups
  Sweetened condensed Milk - 1/2 cup or more 
  Agar agar pd - 1 tbsp
  Fruits chopped of your choice ( optional)
  Vanilla extract - Few drops

  • In a sauce pan put coconut milk, condensed milk and simmer it for a while.
  • Once it boils add the agar agar pd and mix well.
  • Make sure there is no lump formation so keep on stiring for 5 mins more.
  • Add vanilla extract.
  • You can chopped fruits after they cool a bit and transfer them to the mold or a bowl.
  • If you adding no fruit them just transfer them to to the mold and cool them a bit before you can refrigerator.
  • Refrigerate for 4-5 hours or till it sets well.
  • I garnished them with cocoa pd which is again optional.

  8. Lovely clicks. Rice is perfectly cooked and the beans are popping out of that yellow colored rice. Coconut jelly looks very tempting and you presented it very well. Coconut jelly looks just wonderful in that blue plate garnished with cocoa

  10. Beans rice sounds like our masala rice na, that blancmange looks a light dessert after a heavy meal. Beautiful recipe choices.

  17. I grew up with this rice and peas almost every day except for fat concerns my parents made it with water mostly and only with coconut milk on special days. however you kept it so authentic by keeping with the spices traditionally used.

    However, never had this coconut pudding - must ask my 100% Haitian cousins about it. Yours looks so good.
