Today  the letter is K and I chose Kuwait for K which is officially called state of kuwait is an arab country in west asia. The cuisine and culture plays an very imporatant role , Kuwaiti diet is incomplete without Fish and seafoods. In kuwati culture  hospitality takes an important part, guest are treated with respect as in any culture .The Biryani which was originated in arab countries was then Migrated to Indian food too, There is No place for vegetable Biryani here  as the Chicken Biryani is said To be the traditional one. I thought if they might have vegetable Biryani I wud have made veg biryani for this country But am happy that I ended up making too flavorful Desserts.Saffron and cardamom is a very important flavor added in any dessert in Kuwait  and so I made one fried and one baked dessert infusing the flavours of Kuwait. Kuwati also prefer flat bread called Khubz which is traditionally baked in a clay oven its a like a kuwati pita bread .

Traditionally they have n number of snacks which is had for tea time snacks and one such traditional cake is Gers Ogely. This is a very old fashioned kuwait cake which has saffron and cardamom flavors in it . There are many modern version of this cake with filling like cream cheese or nutella. If you don't have egg replacer you can actually substitute with yogurt too, some also add turmeric to it so that the yellow color pops up well.This cake is perfect spongy delight to go with tea or coffee.For my second Recipe  I chose A fried version of Kuwait donuts or as they call it fritters. These are yeasted  doughnuts which similar to the Honey doughnuts I made fro C - Cyprus but the flavors just make it taste different.

Desserts and Tea time snacks recipe  All purpose flour - 1 cup
  Baking pd - 3/4 tsp
  Salt a pinch
  Sesame seeds - 2 tbsp ( optional)
  Saffron - 1/4 tsp
  Egg replacer - 3 tsp + 9 tbsp
  Sugar - 3/4 cup
  Butter - 1/4 cup
  Milk - 1/2 cup
  Cardamom - 1/4 tsp 
  Rose essence -  few drops

  • Pre heat the oven 350 F , grease a cake pan with butter/ oil and keep it ready.
  • In a bowl Mix egg replacer diluted in water , sugar and mix them well.
  • In another bowl mix Milk, melted butter,saffron strands, rose essence, and Mix them well with the egg replacer mixture.
  • Sieve all purpose flour , baking pd ,cardamom, salt a pinch . 
  • Mix the wet ingredients  to the dry ingredients .
  • Combine them well and pour the batter in the baking tray.Top it with toasted sesame seeds you like I skipped it.
  • Bake it for 30 mins  or till a tooth pick inserted comes out clean.
  • Cool them on a wire rack for 5-10 mins and them invert it on a plate.
  • Dust some icing sugar for garnish. Serve with tea or like a snack.

Kuwait doughnuts   All purpose Flour - 1 cup
   Besan / chickpea flour - 1/3 cup
   Warm water - 2 tbsp
   Warm Milk - 1/2 cup
   Instant Yeast- 1 1/2 tsp
   Sugar - 1/2 tsp
   Cardamom - 1/4 tsp
   Saffron - 1/4 tsp
   Rose essence - few drops 
   Oil for frying
   Pistachio for Garnish ( optional)
   For sugar Syrup
   Sugar - 1/2 cup
   Water - 1/4cup
   Few Saffron strands 

  • In a sauce pan put sugar, saffron strands and water. boil them till sugar dissolves and it starting bubbling well. No need to attain the string consistency. Keep this a side.
  • Take a small bowl put yeast , sugar and warm water and mix till till dissolved.Keep it a side till it is foamy.
  • Mix the saffrons strands in the warm milk and keep it aside for 5 mins.
  • In a large bowl  add the flours , cardamom pd , yeast mixture, warm milk with saffron strands, rose essence.
  • The batter consistency must not be too running nor too thick.
  • Keep the batter cover in a warm place for 1-2 hr till it ferments.
  • Once it ferments Mix the batter , take a plastic spoon and little oil in the bowl , keep it ready.
  • Heat oil in kadai / pan . Now take  the plastic spoon dip the spoon in the bowl of oil.
  • Spoon up the batter and slide the batter in the hot oil. This way it drops easily in the oil else it will be too messy to work with.
  • Fry the dough balls till golden brown in color from all sides.
  • Remove the fritters and transfer it to kitchen towel. Repeat the same for the rest of the batter.
  • Serve  drizzled with some sugar syrup on them.
