Orange and Tomato Soup~ Zimbabwe Cuisine

Today we are landing on the last letter in the alphabet series and am so happy I could make it till z this time. Enjoyed thourughly the world cuisine we explored this month , Impressed my daughter and H with some unknow new dishes and am so happy I could make it. Thanks to valli for thinking about such wonderful theme , I enjoyed reading and knowing about so new countries and cook some recipes from them which I myself had hard time in pronouncing. Glad that I could make it till z. For my last letter in the series I wanted to make platter but my lappy crashed again 🙁 seriously don’t know Y this year I had to fight a lot with my laptop and bcoz of which I couldn’t be punctual some times. Anyway am praying god that H should gift me a new lappy soon 😉 .. Ok for letter z I chose Zimbabwe.
 
Zimbabwe is officially called as republic of zimbabwe located in south africa. Zimbabwe literally means House of stones, here at meal time before eating a bowl of water is placed to wash our hands.It is strictly considered impolite if a person uses left for eating here.Guest are served instead of having self service. They ave 3 meals a day The breakfast may consist cornmeal or oat meal ,tea, bread etc. They have this yummy orange soup which is traditional and orginated from colonial zimbabwe. I chose this healthy and unique soup to end up my mega marathon this month. It was so much fun reserching, cooking , clicking and blogging about each country. Now lets move to the soup recipe..

Orange and Tomato Soup

  Ingredinets
  Orange – 1no ( squeeze and take the juice)
  Tomato – 1 no ( chopped)
  Onion – 1/4 cup ( chopped)
  Thyme – 1/4 tsp
  Butter – 2 tsp
  Garlic – 1 clove ( minced)
  Orange zest – 1/4 tsp
  Vegetable stock as needed
  Pepper pd as needed
  Salt to taste
  Method
  • In a sauce pan  heat butter, add thyme , garlic, Onion and saute them till translucent.
  • Add chopped tomates and saute.
  • Add the vegetable stock  and boil them till the tomato cook well.
  • Strain the soup and store the water.
  • Puree the tomato, onion and the ingredinets you have strained and mix it with stock.
  • Boil the soup and turn them off.
  • Add the orange zest and orange juice in the end .
  • Add salt and pepper as needed.
  • I added some chopped lettuce leaves for garnish which is optional.
  • Serve them warm.

    Very different soup, i have tried soup with orange and tomatoes separately, but this soup sounds quite different.

    Oranges and tomatoes is an interesting combination. Wonder how it tastes. I have tried orange and spinach soup but never this combination. Orange and tomato soup as a nice orange color. Lovely.
