Yemani Eggplant Salad |Salatat Banadura ( Tomato salad) ~Yemani Cuisine

Today we are landing letter y and am so happy have done all categories of recipes this month though desserts count much more when compared. Thanks to  bm for making me do this. So for letter y had no other option yemen was the only country i found and so made two delicious and easy to make salad  from the country. Officially yemen is called Republic of yemen , its a arab country. The cuisine here is most widely called as middle eastern cusine and it is influced by mughalai and Indian cuisine.I chose two yummy salads from this country .. lets quickly move to the recipe…

Salads recipe

Ingredients 


Eggplant -1
Onions – 3 tbsp
Yogurt – 3 tbsp
lemon juice – 1 tsp
Olive oil  – 2tsp
Garlic – 1 clove ( minced)
Cumin pd – 1/4 tsp
Pepper pd – 1/2 tsp
Salt to taste

Method

  • Grease the egg plant and roast them well on top of a gas stove till they are cooked and you can remove the Skin easily.Remove the skin and mash tbe flesh well.
  • Add all the other ingredients and mix well.
  • Serve it immediately.

Salatat Banadura

Ingredinets

Tomato – 1 No
Garlic – 1 clove (minced)
Lemon juice – 1/2 tsp
Salt to taste
Coriander leaves -For Garnish
Pepper pd as needed

Method

  • Slice the tomatoe and mix all the other  ingredients.
  • Garnish  it with coriander leaves and serve.

    Both salads looks fabulous, may be i'll finish that plate tomato salad happily anythime.. But i need some pita chips to have with that eggplant salad..Lovely choices Manju.

    Beautiful presentation and both the salads look good. This eggplant dip/salad is so popular in that region, isn't it? Almost all the countries have it as their common food.

    I hope your owes with your laptop come to an end very soon.
    That tomato and orange soup looks vibrant and delicious. Combination of these ingredients sounds like it is going to taste great.

    They both look very delicious.. Eggplant dip is very inviting but the salad is the one I have my eye on.

    after all the sweets in this month, these healthy salads must have been a welcome change. I suppose this eggplant dish is their version of baba ganoush
