Its 35 days more for Christmas eve , I know some have already started  baking for Christmas in this blogosphere I have got a very interesting combo which goes so well and no one will find the secret ingredient  in it , perfect for the holiday season . I love to bake cupcakes and cake they are so easy to make and are perfect sweet treat you can give your family after a meal. I have experiment many cupcakes with fruit and vegetables but this one of my fav as it has Zucchini in it. Chocolate and zucchini goes very well and in cupcake you wil hardly find it has zucchini in it. I made these spongy and moist cupcake for car snacks theme today and my daughter was like so excited once she entered home from school she just pick up a cupcake and enjoyed it thoroughly as i have already said she is a big chocoholic ,  I had a bowl full of ganache on the table near the cupcakes she just licked them all, Frosting a cupcake with chocolate ganache is a perfect to impress a chocoholic person like my daughter.  Lets move on to the recipe quickly..Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#45.

Dark Chocolate Zucchini Cupcakes

  All purpose flour/ Maida - 1 1/4 cup
  Dark chocolate pd - 1/4 cup
  Zucchini - 1 cup ( shredded)
  Baking pd - 11/2 tsp
  Baking soda - 1/2 tsp
  Condensed Milk - 1 can/ tin (14 oz)
  Milk - 1/2 cup
  Apple cider - 1 tbsp
  Chocolate ganache  - as needed ( For recipe Click here)
  Sprinkles - for garnish

  • Pre heat the oven at 350 F.
  • In a bowl sieve all purpose flour, dark chocolate  pd, baking pd and baking soda.
  • Add zucchini to the flour mixture.
  • Mix condensed milk and milk together.
  • Now mix the wet ingredients  to the dry ingredients.
  • Whisk they well  add apple cider and fold them in the batter.
  • Put the cupcake liners in the cupcake mold , fill 3/4th of the liner with chocolate batter.
  • Bake the cupcakes for 10-15 mins at 350 F , till a tooth pick pricked comes out clean.
  • Once done , cool them on a wire rack.
  • Spread a little chocolate ganache ontop and garnish it with sprinklers.

With half the batter  I made a round shaped cake with ganache frosting and butter cream frosting:)
