Pasta is my daughter fav and tend to make it often for her but she loves only the standard white sauce pasta . My H in another hand likes some innovation every time ;) So I made this delicious salad for our dinner today and we just loved it a lot. I learn't to make thousand island salad at school but we always make salad with mixture of vegetables but this time adding cooked pasta makes it more filling and though it is a cold pasta trust me you will love it a lot. I even tried cold pasta salad with white sauce too which i be blogging very soon. The vegetable crunch in this salad is perfect and gives a balance texture to this salad. Lets move on to the cold pasta salad.

Cold Pasta Salad

  Pasta - 1 cup 
  Carrot - 1/4 cup (sliced)
  Capsicum - 1/4 cup ( chopped - I used 3 different colors)
  Onion - 2 tbsp
Pasta recipes  Spring onion greens - 2 tbsp ( chopped)

  For 1000 Island dressing 

  Vegan Mayonnaise - 1 cup 
  Tomato ketchup - 2 tbsp
  Tobasco sauce - 1 tsp ( adjust as per your taste)
  Pepper pd as needed
  Condensed Milk - 2 tsp
  Salt to taste

  •  In a sauce boil enough water, add salt and the pasta.Boil them till the pasta is soft.
  •  Drain the pasta in a strainer and pour tap water on them so that pasta won't stick with each other.
  • Now for thousand island dressing mix all the ingredients under "For 1000 Island" and keep it aside.
  • In bowl add the cooked pasta, carrots, capsicums, spring onion greens, onion and Mix them well.
  •  Add the salad dressing and gently mix them till the dressing is covered on the pasta.
  •  Chill them refrigerator for a while and serve.

  1. Wow! Had forgotten about thousand Island dressing til now- used to be one of my faves in pre-vegan days, but of course you can buy eggless mayo now... thanks for the reminder :)
