I make vegetable chutney's a lot lately for idli dosa and they even taste yummy with chappathi. I have posted the ridge gourd chutney version earlier and now am sharing another yummy vegetable chutney. Thogayal and chutney's are my H's fav, so I make vegetable thogayal as it can't go wrong and taste yummy as well as a healthy option to include veggies for tiffin recipes. I make carrot chutney the same way , these chutney's are quick and easy to make and different from usual chutney , perfect way to impress your family with this new version of chutney as side. Now moving on to the recipe..
Beetroot - 2 no medium
Urad dal - 1 tbsp
Channa dal - 1 tbsp
Tamarind - one marble size
Red chillies - 2-3 no
Oil - 1tbsp
Salt as needed
Wash , peel amd chop the beetroot into cubes.
In a pan heat oil add urad dal and channa dal .
Saute them till golden brown , add red chillies and saute.
Add chopped beetroot, add salt as needed and mix them well.
After beetroot cooks well add the tamarind and mix them well. Cook them for few minutes.
Cool the mixture and blend them in a mixture till smooth without adding any water.
