Eggless Chocolate cake Recipe

I always love cake pops and cake truffles more than a whole can by itself , simply bcoz it can me made more attractive and the added coat of chocolate makes it more sinful. So I thought of making a truffle with a basic chocolate cake and it tasted yumm. Truffles are perfect when you are giving away to your loved ones as a sweet treat gift. You will not believe I made 4 of my last baking for the marathon on the day when we were flying and just gave away to those friends as a token of thank you. From those last 4 this was one among them and they appreciated me a lot . My chocoholic kidoo loves me more when I make chocolate treats and she loved it too. This is a simple truffle which can be made with leftover cake crumbs too but as baking was the theme I baked a cake especially for making these truffles. I use Semi sweet chocolate for coating the cake balls but tried almond chocolate bark this time and to my surprise much more yummier. This is a very easy to make and simple truffle perfect for any festive season. Now lets move to the recipe quickly..

Eggless Chocolate Cake Truffle

  Ingredients 

  All purpose flour – 1 1/2 cup
  Cocoa pd – 4 tbsp
  Milk – 1 1/2 cup
  Sugar – 1 cup
  Oil – 1/4 cup
  Baking pd – 1 tsp
  Baking soda – 1/2 tsp
  Vanilla extract – Few drops
  Vinegar – 1 tsp 
  For truffle 
  Cream cheese Frosting – 1/2 cup
  Almond Bark chocolate – 1 cup ( grated)
  Semi-sweet White Chocolate – 1 cup ( grated)

  Method
  • Preheat the oven at 180 C for 15 mins . Grease the cake pan and keep it ready.
  • In a bowl sieve all pupose flour,cocoa pd, baking pd , baking soda.
  • In another bowl Mix Milk, oil, sugar, vanilla extract.
  • Now slowly combine wet ingredients to the dry. Mix them till they are well combined.
  • Add vinegar in the end and flod it the batter.
  • Pour it in a greased cake pan and bake it for 30 -40 mins or till the tooth pick inserted comes out clean.
  • After the cake is done baking remove it from oven and let it stand for 5 mins .
  • Then invert the cake on a wire rack and let it cook.
  • After it cools down break them to crumbs.
  • Add cream cheese frosting to the cake crumble as needed to make a dough consistency. Make equal size balls of it.
  • In the mean time melt the almond chocolate bark in microwave for 30 secs then take it out mix it and the microwave them again if you find any lumps .
  • Do the same and melt the white chocolate  and fill them in a piping bag or a zip lock bag.
  • Drop a cake ball in the melted almond chocolate bark using a fork coat the ball gently and let the excess drip off.
  • Keep them on a parchment parper to dry. Do the same for all the cake balls.
  • After they dry snip off the zip lock in which you have your white chocolate drizzle them on the cake truffles in zig zag motion.
  • Let the truffle dry then place them in a cupcake liner and serve.
