Pineapple Upside Down Cake | Eggless Pineapple Upside Down Cake

I have made pineapple upside down cake already and blogged it but the caramel syrup was made with jaggery bcoz I brown sugar was not available at home then , But I wanted post the brown sugar version too so included this as a part of the marathon . I know I am late as usual just settling things down slowly , I miss my old place but then things change. When I was in a hurry to make all my bakes just 2 weeks before it started I didn’t think about I will post all the hard work on time and as usual am little behind but hopefully I will complete this marathon as I have done with all my baking posting is a hard task when unopened baggage are around I wish I over come this hurdle too. Now coming to my eggless version of pineapple cake I was in so much hurry to make this cake on that day bcoz I had a task of baking atleast 4 a day and so you can see the cake is slightly damaged by me. I inverted the cake when it was super hot so don’t be in a hurry let the cake cool down I know you people are more patient than me. The cake it self will speak when you make it no need for me explain its deliciousness I shared this spongy and flavorful cake with friends and they enjoyed it. It may look little work to make this cake but it is so easy trust me. Moving on to the recipe.

Pineapple Upside Down Cake

  Ingredients

  Pineapple – 1 can
  Cherries – 5-6 nos
  For caramel sauce
  Brown sugar – 1 cup
  Butter – 5 tbsp
  For cake
  All purpose flour – 11/2 cup
  Baking pd – 1 tsp

  Baking soda – 1/2 tsp

  Butter – 1 stick or 1/2 cup ( at room temperature)

  Sugar – 1 cup

  Yogurt / curd – 3 tbsp.

  Milk – 1/2 cup
  Pineapple essence – few drops
  Pineapple juice or the syrup from the canned pineapples – 2 tbsp

  

  Method

  • Grease a cake pan well with butter.
  • In a pan heat the brown sugar and butter till the sugar and butter melts completely and stir constantly.
  • When it starts bubbling turn off the heat.
  • Pour the caramel sauce on the greased pan , place the pineapple rings over the caramel sauce as you like.
  • Place cherries in the inner roundels of the pineapple rings and also in the gaps if any.
  • In a bowl sieve all purpose flour, baking soda, baking pd . In another bowl cream the butter and sugar.
  • Add pineapple essence, Yogurt, Milk and Mix them well. Also add pineapple juice.
  • Add the wet mixture to the flour mixture slowly and mix the well.
  • Once the batter is ready pour it in the cake pan in which we previously arranged the pineapple rings and cherries.
  • Bake them in a pre heated oven for 40-45 mins at 350 F or till a tooth pick inserted comes out clean.
  • After the cake is done baking, cool the cake till it attains room temperature.
  • Take plate and invert it on the cake pan , then carefully flip the cake to the plate.
  • Tap the edges with a knife handle so that nothing gets stick in the pan.
  • Cut a slice and enjoy.
