I love baking cakes and muffins ,Each time I bake I try to experiment diffrent substitutes with yogurts, milk, fruit purees. I love the muffins with natural fruit puree substitute and they always turn out super moist and spongy. I make mango falvored cakes a lot and have once done a guest post on swethas blog too but I wanted to share this delicious muffin which I make at home often and it is our fav now. It is a very healthy option to substitute fruit puree in the cake and the flavor of the cake is the best part , you will love it. Mango muffins are very perfect to make in mango seasons but if you don’t get canned puree will do wonder to. As canned mango puree has its own sweetness the sugar or condensed milk added can be adjusted. To give a variation I added some chopped appled in the same batter and made some Mango apple muffins they tasted yummy too. Mango Chocolate Chips Muffins

  Ingredinets 
Muffins with fruits recipe
  All purpose flour- 1 1/2 cup
  Mango Puree – 1 – 11/2 cups ( Adjust to   make the batter to right consistency)
  Condensed Milk – 3/4 cup
  Baking pd – 1 tsp
  Baking soda – 1/2 tsp
  Apple cider – 1 tbsp
  Oil – 2 tbsp
  Chocolate chips – As needed
 
  Method
  • Preheat the oven at 350 F and line the muffin tray with cupcake liner.
  • In a bowl sieve All purpose flour , baking pd, baking soda together.
  • In a seperate bowl add mango puree, oil, and condensed Milk. I used the canned mang puree which is generally sweetned so used less condensed milk than 3/4 cup . Make sure you taste and adjust as sweet you want our muffins to be.
  • Now mix the flour mixer and mago mixer together till they are smooth and lump free.
  • Add apple cider and fold the batter. Using a spoon fill 3/4 of the liner with the batter.
  • Top them with chocolate chips and bake them for 20 -30 mins, till a tooth pick inserted comes out clean.
  • Cool them on a cooling rack and enjoy.
  Note : I used Mango puree ranging from 1 – 1 1/2 cups to make the batter to right consistency You can increase or decrease the amount as needed to get the right consistency. I haven’t used Milk here so added a extra dose of mango puree to get the batter to right consistency.  And I use US cup measurement to note.

Variation : Add chopped apples to the batter and stir well. Bake them as specified before.

    mango puree 1 11/2 i didnt get it dear ? quarter cup of puree?

      It was ranging from 1 to 1 1/2 cups of mango puree dear, I added in between 1 to 1 1/2 cup .. Hope you got it..

      I amount varies from 1 to 1 1/2 cup.. i think it depends on the flour type you use I added 1 1/4 cup or so for making the muffins to right consistency mine was not runny at all ..

      Srividhya as you can see this is mango muffin I added a extra dose of puree to make the batter right. Hope you get it now . Have updated the post do read the notes.
