Dragon fruit cake

Dragon fruit is such an beautiful looking fruit and I have been wanting to experiment with this fruit. This fruit is very popularly grown in asia, Mexico, south America. The plant looks like a cactus and this fruit comes in 3 different color- the flesh color might be red or white i got the white variety here in US, there is also yellow flesh variety available. This fruit tastes just like a kiwi , I personally love kiwi and this fruit was delicious.. Dragon fruit is very nutritious and I have tried my hand in experimenting them in cupcakes. I added a rose syrup to get the light pink color and also the rose flavor combo went well for us. I always try to make some fruit puree cake and this was a real delicious one . Dragon Fruit Rose Cupcake

  Ingredients
Chinese Dragon fruit
  
Dragon fruit – 1 No ( make a puree )
  All purpose Flour -1 1/2 cups
  Baking Pd – 1 tsp
  Baking soda – 1/2 tsp
  Rose syrup – 2 tbsp
  Condensed Milk – 3/4 cup
  Yogurt – 1/4 cup
  Oil – 2 tbsp
  Method 
  • Pre heat the oven to 350 F , prepare the dragon fruit puree and keep it ready.
  • In a bowl sieve flour, baking pd, baking soda.
  • Add  the dragon fruit puree, rose syrup, condensed milk, yogurt, oil.
  • Mix them well to a smooth batter.

  • Line a cupcake tray with cupcake liner , fill each liner with 3/4 th of the prepared batter.

  • Bake them at 350 F till a tooth pick inserted comes out clean.
  • Cool them on wire rack for a while and then enjoy this cupcake as is or you can also frost them before serving.
