Navratan Korma is a very popular Indian gravy which is super rich and they are mildly spiced. Navratan as the names says it contains 9 ingredients , Now it can be either  9 varieties of vegetable used in the gravy  or using 9 ingredients as such with all varieties of nuts like cashews, almonds, walnuts, pistachios. Here I used 9 ingredients as such and made them with cashew based gravy. There  are many version to make a navratan korma and this the vegan way I make often. This rich gravy goes well with any Indian bread  but it is a perfect accompaniment for Rice too , I have them with plain rice often. This is a perfect side dish to make for a party or any festive season. I made this gravy with no onion no garlic , so it is perfect jain curry to make when you want to skip them.   Vegetables - 1 cup ( Carrots, Potato, Capsicum,Peas, Beans)
Korma recipe  Paneer - 1/4 cup ( cubed)
  Raisins- 2  tbsp
  Cashews - 4-5 No ( broken)
  Cashews ( To grind ) - 1/4 cup
  Poppy seeds - 1 tbsp
  Cinnamon stick - 1 No
  Cardamom - 2 nos
  Cloves - 2 nos
  Green chilli paste - 2-3 tbsp
  Cumin seeds - 1/4 tsp
  Turmeric pd - 1/4 tsp
  Red chilli pd - 1/4 tsp
  Oil- 2 tbsp
  Coriander leaves - 2 tbsp ( chopped)
  Salt to taste

  • Grind the cashews and poppy seeds to a fine paste with water.keep it aside.
  • In a kadai heat oil add cinnamon  stick,cloves, cardamom, cumin seeds.
  • After the pop add green chilli , bell peppers and saute for a while.
  • Add the other chopped vegetables and saute them well till they are well cooked.
  • Add turmeric pd , red chilli pd and saute them further more.
  • Add cashew poppy paste and enough water needed to make a gravy.
  • Add salt as needed and cook the gravy for 5-10 mins in low flame till the raw smell of the cashews goes off.
  • Garnish with chopped coriander and serve them hot with roti/ chapathi/ Rice .
