Its already 3 done and the fourth day begins with Letter D. As you all know am doing a month long marathon with our Bm members on world cuisine as our theme here is the letter D country. For D I just chose randomly Danish Becoz I  have made danish pastry in our school but I didn’t have time to make it for this country as you might be knowing Breads and pastries always need patience . So I just opted for a quick and  easy to make Two desserts from the country which is know for its desserts .

Danish cuisine is generally from denmark which known for its huge Milk producing country , am just recalling my social studies lesson 😛 Its really important for us to know about some facts of the country before try its cuisine I believe so will share what I have read.The open sandwich is the basic and usual lunch had here and is the nationality special.People from denmark are called Danes they have 3 meal a day breakfast , lunch and dinner as we do too.
They also have snack in between in the late evening. Unlike the other countries like afghan I have mentioned before here in a home Mother and father both cook together every day and teach their kids to cook isn’t that amazing.. As for as I know as kid  My mother used to remind me daily that I have to wed and go one day and cook for the whole in law family then only she might be proud of me.. Lolz I simply disagree with her now , what more fun is there than cooking with your partner isn’t it.They also have buffet table called Cold table becoz in this buffet they serve every dish cold and not much cooked. 

Now coming to the recipes I picked from the country is two most important in danish tradition. Ris a la mande is rice pudding, you might say what the heck this girl is just making a Indian kheer and calling them in different names 😛 Lol thats not the way here this rice pudding is made totally in different way not the Indian Kheer for sure you will see. In Christmas they prepare variety of dishes to serve on the Christmas eve. Which all meats  and for vegetables they have this caramelized potatoes and red cabbage for sure.Also there is a special Rice pudding which Ris a la mande  on the day and served to the guests. There is also an interesting game done with pudding while adding almonds to the pudding all almonds are chopped but one almond is just put whole, whoever gets the whole almond will get a gift on the day. Traditionally cherry sauce is added for topping But I had only raspberry available in my fridge so used them up. 

For the second Dish is very very simple danish pancakes . If you have apaniyaram pan you should sure try it.Who said that paniyarams are only prepared in India they do exist in other countries to in the name of Æbleskiver which the danish pancakes.When I first came to US and saw the Æbleskiver pan in Cosco I was surprised even these people make use of them then when I saw the cover in the pan I got an idea that they make pancakes with them , this was few years back.I used my paniyaram to make these pancakes and they came out super fluffy. Traditionally they are made both in all purpose flour and wheat flour I used onlt all purpose flour.These pancakes are again a christmas favourite , which are prepared befor Christmas in december , they are served with a special wine named mulled wine. You can actually fill variety of fruit in it and make stuffed Æbleskiver. So with no futher ado lets Move on to the recipe…

  Ingredients 
  Arborio Rice – 1/4 cup
  Milk – 1 cup
  Heavy Cream – 1 cup
  Vanilla essence-few drops
  Sugar – 3 tbsp
  Almonds( Blanched and peeled) –  1 cup
  For Rasberry Sauce
  Rasberries – 1 /4 cup
  Water – 2 tbsp
  Sugar – 1/4 cup
  Cornstarch – 1 tbsp ( Diluted in 1 tbsp water)
  Method 
  • In heavy bottomed pan bring milk to boil , add the rice.
  • Simmer and cook till the rice is tender.
  • Stir them ocassionally so that the milk doesn’t burn from bottom.
  • While the rice is cooking whip the cream and make the sauce.
  • Whip the cream till soft peaks add sugar and vanilla essence to it.
  • Give it a stir , be careful while whipping as you don’t want whip up butter from the cream so whip only till it has soft peaks.
  • To prepare sauce heat a pan put water, rasberries and sugar .
  • Boil them well after a while the rasberries wud have cookes well and forms a puree.
  • If you want you can strain them to remove the seeds, But I kind of like the nutty taste to the sauce.
  • To Make the sauce little thicker Dilute corn starch with water and add it to the sauce.
  • Continue cooking for a while and once it thickens up switch off the flame.
  • Cool the sauce . Now your rice would have absorbed all milk and should tender enough.
  • If you want to have this dessert cool, you can cool the rice and them add to the whipped cream.
  • Fold the cooked rice in whipped cream, add chopped almonds leaving a single almond which should just be added whole.
  • Mix them and serve the topped with rasberry sauce.
  • It can be had either way hot or cold. Any fruit sauce say strawberry and cherry sauce will also do.

  Ingredients 

  All purpose Flour – 1 cup
Danish cuisine  Baking soda – 1 tsp
  Egg Re placer – 1 1/2 tsp + 1 tbsp water
  Sugar – 2 tbsp
  Salt – 1/4 tsp
  Buttermilk – 1 cup
  Milk – As needed
  Oil / Butter as needed
  Blu berries – Few ( Optional)
  Chocolate sauce/ Raspberry sauce to serve

  Method 

  • In a bowl add Flour, sugar, salt, baking soda, egg replace diluted in water.
  • Add butter milk and mix them well, Add extra milk to get the semi liquid consistency.
  • Heat the Æbleskiver pan/ Paniyaram pan with some oil or butter drizzled oh the hollows.
  • Pour a steel tsp full of batter in a single hollow do this for all the hollows  , If you are adding a fruit filling Like I did blueberry fill only the 1/4 part of the hollow and then add the filling again top with the pancake batter.

  • Here I used a skewer or any long thin stick will work.
  • Using the skewers help flip the pancake carefully , so that cooked part is facing up and the uncooked part is down.
  • Drizzle some butter or oil then cook the second side well.
  • Once they are cooked from both sides remove them to a plate and serve them warm with any sauce or syrup of your choice with fruits topped.

    I enjoyed reading about both the dishes Manjula..I had wanted to make Æbleskiver as well..but couldn't do it…it's nice to know their culture of both parents cooking together!

    Wonderful desserts! Rice pudding with berries must have tasted great. Love the blueberry stuffed aebleskivers. Again nice choice of food for the this country.

    Both dishes look wonderful. Even if we though the pudding was on Indian lines, the raspberry sauce makes it entirely different and your eggless version Æbleskiver look damn delicious.

    Love that pudding manju, it is sooo rich & luscious!! That sauce on top, heaven i would say!!! Those blueberry filled ableskiver aka paniyaram is damn tempting!! 🙂

    Wow Manju the rice pudding is awesome.I love the sauce too and will like you prefer to leave the seeds in the sauce. As for the second tongue twister yu are giving me ideas. I have frozen cranberries in the fridge… for once will be glad if I have to finish all the paniyarams myself. 😀
