I know most of them would have started preparing for diwali weeks ahead but if you running late to even think what to be done for diwali and looking for some instant recipes you could make to make the festival more enjoyable then this is one recipe you just try. Soaking dal and waiting for the dal to soak and them preparing medu vada is worth it but if you don’t have so much patience or if you are in a hurry you have this amazing option of using up the bread slice lying in your kitchen. Bread medu vada is a simple and quick to make option for all the medu vada lovers trust me this vada will be equal to the traditional vadai . I conducted a contest in my blog for non blogger and this was one of the entry by aishwarya which we enjoyed a lot and since then I make them every time when i have extra bread in hand. This is a perfect festive delicacy to indulge. No soaking No waiting instant soft medu vada will be ready in minutes..   Ingredients
Diwali Recipes
  Bread Slices – 10-13 Nos 
  Curd  – 3/4 cup 
  Rice Flour – 1/2 cup
  Ginger – 1 inch (Finely chopped)
  Cumin seeds – 1/2 tsp
  Cashews – 3 nos
  Green Chilli  – 2 -3 nos (Finely Chopped)
  Coriander leaves – 2 tbsp ( chopped)
  Baking soda –  a pinch
  Onion  – 3-4 tbsp (Finely chopped)
  Curry leaves – 1 spring
  Oil for deep frying
  Salt to taste
  Method
  •  Cut the edges of the bread and take only the white part in a bowl.
  • Add curd, rice flour, ginger , cumin seeds, coriander leaves , baking soda , onions, curry leaves, cashew nuts and salt to taste.
  • Mix them well to form a batter which is similar to a medu vada batter consistency.
  • Heat oil in a kadai.
  • Take a portion of medu vada using wet hands , flatten them and put a hole in between using your thumb.
  • Slide in the shaped medu vada in hot oil and fry them till golden brown from both sides.
  • Repeat the same with rest of the batter.
  • Serve them Hot with any chutney .Perfect snack for tea or coffee.

      Harini it didn't absorb oil at all as we Mix in rice flour in them.
