Microwave Kalakand Recipe

Diwali is Up ahead exactly 10 days from today and am starting with a simple and instant sweet to make for the occasion of colors and light. Diwali reminds me lots of lovely memories from childhood I always loved this festival as we  used get some new clothes to wear and bursting crackers was a great fantasy. Mom always used to make some yummy sweets and savories and our neighbors used to share some south indian delicacies prepared at home . I love this festival for various other reasons as we do a pooja vijayadhasami in south we keep all our books and business equipments in pooja like tamil people do it for vijayadhasami.Ok coming to the sweet I have made this sweet lots of times But this time took a pic to share with you all. I still remember each diwali I make sweets for my neighbors here unfortunately all my neighbors have moved and I will miss sharing part. I shared this kalakand with my H’s friends and they instantly gave me a feed back that they loved this delicious kalakand a lot, as usual I was full of smiles πŸ˜› So coming the recipe its very simple made with in few minutes and so easy to make in microwave

Quick Sweets For Diwali  Ingredients
  Ricotta Cheese – 15 oz
  Condensed Milk – 14 oz
  Cardamom Powder – 1/4 tsp
  Chopped Pistachios – 5-6 Nos
  Saffron strands- few
  Rose essence few drops (optional)
  Ghee – 2 tsp

   Method

  •  In a microwave safe  dish, grease it with ghee.. mix the Ricotta Cheese, saffron and the Condensed Milk well.
  • Mix them well till all the lumps are gone.

  •  Microwave for 10 minutes uncovered by stirring them occasionally in between every 2 mins .

Microwave Indian diwali sweets

  •  Add in the Powdered Cardamom and Rose Syrup/Rose Essence and mix well again.
  •  Sprinkle chopped Pistachios  in a rectangular greased tray press down and flatten the mixture on top .
  •  Cover and allow to set either in the refrigerator for an hour or on the counter-top for a few hours. I made two version with saffron and with out saffron both taste delicious.
  •  Cut into desired shape and serve.

    Hi Manjula, please suggest me an alternative for ricotta cheese. I want to try this sweet. Looks abs delish πŸ™‚

      Hi chitra,

      You can substitute Paneer instead. Grind 1 cup grated paneer with 2-3 tbsp of milk not too long just 2-3 pulse and then use it in place of ricotta cheese.
