Mawa kachori is a n famous Rajasthani dessert which so popular all over the state. Katchori or Kachauri or kachodi as you might name it is made both in savory or sweet version and My H is big fan of the sweet version with the crispy crust with mawa and nuts filling  soaked in syrup.  This is a perfect festive recipe to make for any occasion. The mawa filling can be used for making gujjas even . Kasta kachori is always my fav and this is the sweet version I make at home often. Lets quickly move to the recipe..

  Ingredients

  For Crust

  All Purpose Flour – 1 cup
  Oil – 2 tbsp
  Water as needed ( preferably lukewarm)

  For Filling

  Mawa – 1cup
  Sugar – 3 tbsp
  Mixed nuts pd – 2 tbsp
  Cardamom – a pinch
  Oil to fry

  For Sugar syrup 

  Sugar – 1 cup
  Water – 1/2 cup
  Saffron – few strands 
  Method 

  For Kachori
  • Mix flour,  oil in a bowl, add water as needed and make a soft and pliable dough.
  • Cover and rest the dough for 1/2 hour.
  For Sugar Syrup 
  • In a sauce pan heat sugar and water, add saffron strands.
  • Boil the syrup till the sugar dissolves and start rolling boil. No need to check for string consistency.
  For Filling
  • In a pan add the grated mawa, and sugar , Cook them in very low flame it the mawa and sugar combines and leaves the sides of the pan.
  • Add the mixed pd to the mawa mixture, mix it well and keep it aside.
  To proceed 
  • Divide the dough and the filling into equal parts.
  • Take a Rolling pin and roll a ball to 2 inch diameter , place the filling in the middle and pull the edges together in the center.
  • Do the same for rest of the dough and the filling.Press the filled kachori dough lightly and roll it . Repeat the same for all the filled balls.
  • Heat oil in a kadai , fry the kachori one or 2 at a time. Fry them in very low flame so that you get a crispy crust.
  • After the puff up a little flip and cook the other sides.
  • Fry the kachoris till golden brown from both sides.
  To serve 
  • Dip the hot Kachoris in sugar syrup it is coated.
  • Garnish with mixed nuts pd and serve them.
