Varagu Arisi Pulao Recipe | Kodo Millet Pulao ~ Millet Recipes

After hearing all the healthy benefits of millets I have started using millets atleast once in a week and I must say it is perfect way to substitute rice. I have made quinoa which a type of millet only available here and we love them . I found Kodo millet in a punjabi grocery store and immediately picked them to give it a try. This is the first time am trying varagu/ kodo millet , I have made many dishes using Thinai/ foxtail millet but kodra / kodo is the first time. This millet is very tiny and white in color , they perfectly taste similar to rice and very healthy. For my first Try I made this vegetable pulao with kodo millet and we enjoyed it a lot.  Now lets move on to this healthy pulao recipe.

Varagu Arisi Pulao

  Ingredients 
  Varagu/ kodo Millet – 1 cup
  Onion – 1/4 cup ( chopped)
  Vegetables – 1/2 cup ( I used potato, carrot, beans)
  Green chillies – 3 nos
  Ginger garlic paste – 1 tsp
  Bay leaf – 2 no
  Cinnamon stick – 1 stick
  Cloves -2 nos
  Cardamom – 2 nos
  Salt to taste
  Oil – 2 tbsp
  Coriander leaves – 2 tbsp ( chopped)

  Method 
  • Wash and soak varagu millet for 15 mins. In a sauce pan heat oil add bay leaf, cardamom, cinnamon stick, cloves.
  • Add onion and saute them till translucent, then add ginger garlic paste and saute them well.
  • Add green chillies , chopped vegetables, salt   and saute them well.
  • Then drain the water from varagu and add the varagu arisi to the vegetables and saute them well for a while.
  • Transfer the mixture to a rice cooker , add 2 cups of water and cook them in rice mode.
  • If cooking in pressure cooker  cook till 2-3 whistles.
  • After the pulao is cooked add coriander leaves and serve them hot with raita.
