DIY lamb Cookie | Lamb shaped Cookie Recipe

Easter wishes to everyone .. Some how I though these cookies will be posted on easter but am one day late. My daughter loves easter egg hunt and back there we always had so much fun on easter she really missed it this year. Baked my heart and soul for last 2 weeks last month and am badly missing baking now .. I love baking cookies and cakes , thought cookies are welcoming in my home but cakes take rest after 2-3 slices , am so grateful to those friends around us who constantly support me to finish all my baking there. Now when I was thinking make a cookie I came across this fluffy lamb cookie and I baked them immediately without second thought and they came out so gud. They are so easy to make without any fancy cookie cutter , I just loved how they look .. After baking a array of cookies My daughter still appreciates me when I show her the pics , she wants those cookies so am very happy about my cookies as the QC  is done by this special person and of course H is always a specimen if am sharing with my friends even if scores little less than 10 /10 then the dish stay at home and finished by h and the lil one.. so I am glad that I have super keen QC done for my food 😉  . Ok coming to the lamb cookie they are so easy to make as I said earlier and they make a perfect party snack and to go with easter theme they are perfect. I original recipe they used wheat flour but I used ALP , I know wheat flour would have made it more healthier but I made it with ALP for this time and they turned out so yumm. Moving on to the recipe..

DIY Lamb Cookie

  Ingredients

 

  All Purpose Flour –  1 cup
  Almond pd – 2 tbsp (Roast them and powder the almonds with skin)
  Butter – 1/2 cup  (1 stick) – Room temperature
  Confectioners sugar – 1/2 cup
  Vanilla Extract – 1 tsp
  Milk – 1 tbsp ( if needed)
  Cocoa Pd – 1- 2 tsp
  Method
  • In a bowl  take the soften butter and cream it well with the sugar till combined.
  • Add the all purpose flour , almond pd , vanilla extract and mix them well to form a dough , if the mixture is dry add milk and make it to dough.
  • Divide the dough to 2/3 rd and 1/3 rd part . Add cocoa pd to the 1/3 rd part of the dough and mix them well till combined.
  • Pre heat the oven at 350 F for 10 -15 mins
  • Pinch the white dough to form small size dough balls and arrange them side by side on the parchment paper  for the body. Use the chocolate dough for making head , ears and legs..
  • Use a tooth pick to make eyes and and press a line on the legs and ears.
  • Bake the cookies at 350 F for 10 – mins till you see slight brown in the corners.
  • The white part in the cookie will spread so no need to worry about any gaps while arranging and the lamb will become more fluffy after baking.
  • Let the cookies cook on the cookie tray for a while and then transfer them to a wire rack.
  • Dust some sugar to make it look white and fluffy. Store them in a sir tight container and enjoy.

Channa masala Pulao is one my family fav as we love white kabuli channa / Chickpea , Instead of making channa masala always I love to include them in rice and do a masala rice which is masala pulao. This pulao with all masala and chickpeas taste so delicious , a perfect treat if you love spicy food but yes it can be prepared with mild spice level too. I prefer basmati for making pulaos they look and taste yumm. This pulao can had with any kind of raita , I always enjoy them with vegetable raita. Kabuli Channa Pulao Recipe

Channa Masala Pulao

  Ingredients

 

  Cooked rice – 1 cup (basmati preferably)

 

  Cooked chick peas – 1/2 cup ( cook chickpeas in pressure cooker with little amount of salt and water till the immerse for 3 whistles)
  Cardamom – 2
Channa recipes  Cloves – 4
  Cinnamon stick – 1 inch pieces
  Bay leaf – 1 no
  Onions 1 medium ( chopped)
  Tomato 1 medium (chopped)
  Curry leaves- 2 sprigs
  Green chilli – 1 slit
  Ginger garlic paste – 1 tsp
  Cumin pd – 1/4 tsp
  Red Chill pd – 1/4 tsp
  Turmeric pd – 1/4 tsp
  Coriander powder 1 1/2 tsp
  Pav bhaji Masala – 1 tbsp
  Oil – 2 tbsp
  Salt to taste
  Chopped coriander/cilantro leaves –   For garnish
  Method 
  • Heat oil in a pan, add the curry leaves, bay leaf, cinnamon , cloves .
  • Now add the green chilli and onions , Saute them till onion turn transparent,.Then add the ginger garlic paste  and saute well
  • Add the tomato and cook them till they are mushy . Add some water if needed to make a smooth paste.
  • Add all the  dry pd spices – Red chilli pd, turmeric pd, cumin pd, pav bhaji pd to the well cooked tomatoes and saute well till combined .
  • Add the cooked chick peas and mix well till the masala’s coat on the chick pea / chole
  • Add salt to taste ( remember that you have added and  saute them for a minute .
  • Add the cooked rice and mix well till all the rice grains combine and coated with the prepared masala.
  • Sprinkle some chopped coriander leaves just before serving.
  • Serve hot with  any raita and papads.
  Note 
  •  You can use sambhar pd instead of pav bhaji masala and they taste yummy even .
  • The amount of spice are given as per our family tastes you can change the quantity as per your families taste buds .

Fried Smiley Potato Fries Recipes

Some times food need to look fancy when they are served to picky eater isn’t it. My daughter just loves anything fried and I wanted to make some different snack this time for her, she is also great fan of Emoticons we use every where today. I saw these cute little smiley fries from Mccain commercials and wanted to make them at home from long. I checked some youtube channels to make these fries and came up with my own version of Crispy smiley fries.  These are perfect way to attract a kid by this I mean it bcoz my daughter finished them all and didn’t leave some for H to taste .. The smiley face is so each to make with the available equipment and there no need of any fancy cutter needed. These can be baked in oven , if baking in oven brush some oil of top of each smiley face and bake them in 200 F for 20-30 mins till they lightly brown. As I made them for the little one who loves fried snacks I fried them. Now moving on to these cute smiley fries Recipe..

Kids friendly Snacks  Ingredients 
  Potatoes – 2 medium size ( boiled and mashed)
  Corn starch / Corn Flour – 2-3 tbsp
  Pepper pd – 1/4 tsp
  Salt to taste
  Fresh Bread crumbs – 1 tbsp ( just cut the brown parts in the bread and grind the white part in a mixer)
  Oil for frying
  Method 
  • In a bowl take the boiled and mashed potatoes, add corn starch,bread crumbs,pepper pd and salt.
  • Mix them well and form a dough.
  • If the dough is too loose add extra conr startch else the amount mentioned is enough.
  • The dough should be smooth and soft.
  • Line a parchment paper on a counter and place the dough on it.
  • Now take another piece of parchment paper place on the top of the dough.
  • Using a rolling pic roll the dough to 1/2 – 1′ inch thickness.
  • Use a cookie cutter and cut the dough in to circle shapes.
  • Again repeat the same for the extra bits.
  • Now take a straw cut the eyes for the smiley.
  • Use a spoons edge to make a smile on the smiley. Do the same for all the smiley circles.
  • Heat a oil in a kadai and when the oil is hot simmer the flame.
  • Slide in 2-3 smiley at a time and fry them till golden brown.
  • Enjoy these crispy smiley fries with ketchup or as is.

Samosa With Tortillas | Instant Samosa | How to make Tortilla samosa (with no dough)

Samosa are fried or baked pastry with savory filling , generally stuffed with peas, potatoes, or even lentils. India is know for its various fried snacks and this is one snack we love to enjoy at home.I have made samosa quite sometime but when we carve for samosa badly it needs prior thinking to make the samosa of tea time snack isn’t it. When ever we had leftover rotis we used to fry them and relish them with some chaat masala sprinkled on it so I thought why not try to stuff some filling into it and fry them , I had a packet of tortilla lying round so used them as the crust for making this instant samosa. Believe me it tastes really like a samosa with a very crispy crust and guess what you don’t have to think prior it is that quick to make , you only have to concentrate on the filling. I love the traditional way of samosa a lot but this is a quick fix if you have unacknowledged guest at home or you have a carving for some fried snack . We enjoyed this samosa thoroughly with green chutney hope you will too.

  Ingredients 

Perfect Samosa recipes
  Flour Tortilla – 4 ( i used large size)
  All purpose flour / Maida – 2 tbsp
  Potatoes – 3 medium size ( boiled and mashed)
  Onion- 1/4 cup ( chopped)
  Coriander seeds – 1 tsp
  Fennel seeds 1 tsp
  Red chilli pd – 1/2 tsp
  Turmeric pd – 1/4 tsp
  Cumin pd – 1/2 tsp
  Coriander pd –  1/2 tsp
  Amchoor pd – 1/2 tsp
  Coriander leaves – 2 tbsp ( chopped)
  Oil – 1 tbsp
  Salt as needed
  Oil for frying
  Water as needed
  Method 
  • In a pan heat oil add coriander seeds, fennel seeds.
  • After they splutter, add the onion and saute them till translucent.
  • Add red chilli pd, turmeric pd, cumin pd, coriander pd, amchoor pd, salt and the the mashed potatoes.
  • Mix the well till all combined in low flame.
  • Cool the filling for a while. Add coriander leaves to it.
  • Now take the tortillas cut them to half , you can make 2 samosa from on tortilla. Cut them and keep it ready.
  • Now for making the glue to stick the samosa in a small bowl take all  pupose flour and add 1-2 tbsp of water.
  • Mix them well till they form a lump free paste. Note the consistency should be thick like a paste , it will not stick if the mixture is runny.
  • Take a cut tortilla and fold them like a cone , apply the all purpose flour glue in the corners to stick them.Make sure there is no gap in pointed part of the cone.
  • Fill the potato mixture pressing gently.
  • Seal the edges with the all purpose flour paste very well (by pressing the edges seal them well)
  • Do the same for rest of the tortillas and filling.
  • Heat oil in a kadai , when the oil is hot simmer the flame and slide in the samosas.
  • Fry them well till they are golden brown from both sides.Flip and cook the other side.
  • Crispy samosas are ready to serve with green chutney.

Milkshakes are always my fav and they are perfect way to start a day . I used to make milkshakes daily for my H with any fruit available , and one of my h fav  is Banana milkshake . Is always love to add some chocolate yumminess to make the milkshake more tempting.This is one filling milkshake your kids will love to drink , instead of giving them plain milk anything flavored will make them more happy isn’t it. Banana chocolate milkshake is our family fav combo which we make them often . Any milkshake when added a scoop of ice cream to it will taste luscious but I haven’t added to keep it simple .

I Love making salads and some times tend to skip lunch and have some rich salad which is itself a whole meal. My recent fav is cold salad using pasta I shared a cold salad version with 1000 island dressing 2 days back which is My H’s fav I also made pasta salad with white sauce dressing. When made this salad first time I was skeptical as I love pasta in white sauce  only hot didn’t think it will taste so yummy and from then I make them often and try add different veggies every time. I Like too eat raw veggies a lot from my childhood so my mom didn’t have a hard time in feeding me with loads of veggies so salad is always my fav . This salad is not for people who are diet conscious, am sure all will be knowing this that some salad are rich in taste and are super filling. Now enough talk 😉  lets move on to the recipe..

Cold Pasta Salad  ( with White Sauce)

  Ingredients

 

Cold salad recipes
  Shelled pasta – 1 cup
  (I used Shelled Pasta but any pasta kind will do )
  Capsicum – 1/4 cup ( 3 different colors)
  Onion –  2 tbsp ( chopped)
  Spring Onion – 2 tbsp ( chopped)
  Pepper pd as needed
  Salt to taste
  For White sauce
  Milk – 1 1/2 cups
  Butter – 2 tbsp
  Maida – 2 tbsp

  Method

  • In a sauce pan boil enough water to cook pasta, add salt in the water.
  • Drain the pasta once cooked and run cold water over it .Keep it aside.
  • In another sauce pan heat butter and add maida.
  • Roast the maida in very low flame till the raw smell goes off.
  • Add Milk little by little  constantly stirring the sauce to avoid any lumps.
  • Let the sauce thicken a bit , then turn off the flame.
  • In a bowl take the cooked pasta, chopped onion, spring onion and capsicum .
  • Mix them add well and Mix them to the white sauce.
  • Add Salt and pepper pd as need .
  •  Enjoy this cold salad any time.

Jodhpuri Pyaz Kachori Recipe | Pyaz Ki Kachori |Onion Kachori

Onion kachori is one of my fav snack on winter afternoon , it is snowing here and what can be better than having some hot kachori with green chutney.I make Kachori at home often and this version is my H’s fav. Pyaz ki kachori is one of the famous snack in Rajasthan where ever you go you can find so many kachori stalls there. even in sowcarpet, chennai you will find some scrumptious kachori stalls. I make Kachori with 3 filling usually moong dal filling is one we learned to make at school , onion kachori is  my fav among all so I decided to make them for snack. Kachoris are very easy to make fresh at home if you are aiming at outcome like the store bought crust you need to add little extra oil before kneading the dough with water, also frying in low flame will make it crispy. If you don’t add oil in the flour it will turn out like a stuffed poori and not kachori. I usually Like adding very little potato to the filling so that the mixture well combined but you can skip it. Now moving on to the recipe..

  Ingredients
Jodhpuri Pyaz Ki Kachori  
  For Crust
  All Purpose Flour – 1 cup
  Oil – 2-3 tbsp
  Water as needed ( preferably lukewarm)
  Salt to taste
  For Filling
  Onion – 1 large ( sliced)
  Potato – 1/4 cup ( boiled and mashed)
  Coriander seeds – 1 tbsp
  Fennel seeds – 2 tsp
  Red chilli pd – 1/2 tsp
  Turmeric pd – 1/4 tsp
  Garam Masala – 1/4 tsp
  Cumin pd – 1/4 tsp
  Coriander leaves – 2 tbsp
  Oil – 1 tbsp
  Salt to taste
  Method 

  For Kachori
  • Mix flour,salt,  oil in a bowl, add water as needed and make a soft and pliable dough.
  • Cover and rest the dough for 1/2 hour.
  For Filling
  • In a pan heat oil add coriander seeds, fennel seeds.
  • Then add sliced onion and saute them for few minutes , add red chilli pd, garam masala,turmeric pd, cumin pd, salt to taste.
  • Add the mashed potatoes, coriander leaves and mix them all together.
  • Cool the mixture well. Note : Don’t saute the onions too much as it is also going to cook when you fry the kachori’s
  To Proceed
  • Divide the dough and the filling into equal parts.
  • Take a Rolling pin and roll a ball to 2 inch diameter , place the filling in the middle and pull the edges together in the center.
  • Do the same for rest of the dough and the filling.Press the filled kachori dough lightly and roll it . Repeat the same for all the filled balls.
  • Heat oil in a kadai , fry the kachori one or 2 at a time. Fry them in very low flame so that you get a crispy crust.
  • After the puff up a little flip and cook the other sides.
  • Fry the kachoris till golden brown from both sides.

I know I have been blogging chaats and snacks lately , hope you all enjoying the snacks shared here. Here is another interesting and a very quick chaat which can be enjoyed as an evening snack . Popcorn’s are my fav I have posted Masala popcorn’s few days back I just used some of those popcorns to make this quick bhel. I know it is not the traditional way and many ingredients might be missing in this bhel but this how we enjoyed you can add green chutney sev papdi too to this popcorn bhel it will surely taste yummy but this is the Instant and quick way to enjoy this bhel. Lets quickly move on to the recipe.

  Masala Pop Corn –  4 cups ( Home made Masala Popcorn) 
popcorn recipe  Onion – 3 tbsp ( chopped )
  Tomato – 3 tbsp ( chopped)
  Chaat Masala as needed
  Lemon juice as need
  Coriander Leaves – 2 tbsp ( chopped)
  Green chillies – 1 no ( chopped)
  Salt to taste

  Method 
  • In a bowl Mix the onion , tomato, chaat masala , coriander leaves, lemon juice,green chillies together.
  • Add the Freshly popped  Hot masala pop corn and give them a mix.
  • If you want you can also include green chutney and tamarind chutney to the recipe.
  • Add Raw mango for the extra likes in taste .You can also add sev if needed.
  • Serve them immediately and enjoy.

Chaats always my fav , no street food can beat Indian spicy chaat corners. I and husband love to have any chaat it might be, one of our recent fav is Chole tikki chaat . I thought of trying it at home and we just couldn’t stop us from digging in. There many variation of Chole chaat with samosa, kachoris, even masala vadai i have tried and even with Tikki . Chaats look so simple but there is so many ingredients to be included makes it delicious. Even though the process might be long when it comes to chaat this is a very simple dish to cook. This is one among the popular street food, some tikki  are made with a filling  for this chaat which taste yummier even but i made a simple version. Lets quickly move the chaat recipe.

Chole  aloo tikki recipe

North Indian Chaat Recipes

              Chole Tikki Chaat

  Ingredients
  For Chole 

  Kabuli Channa/ Garbanzo beans – 1  cup ( soaked overnight and pressure cooked)
Chaat Recipes  Channa masala – 1 tsp
  Red chilli pd – 1/2 tsp
  Turmeric pd – 1/4 tsp
  Cumin pd – 1/4 tsp
  Coriander pd – 1 tsp
  Tomato – 2 no ( chopped)
  Onion – 1 no ( sliced)
  Cinnamon stick – 1 inch
  Star Anise – 1 no
  Cardamom – 1-2 no
  Oil – 2 tbsp
  Salt to taste

  For Tikki
  Potato – 2 no
  Pea ( cooked) – 1/4 cup
  Red chilli pd – 1/2 tsp
  Turmeric pd – 1/4 tsp
  Garam masala – 1/4 tsp
  Cumin pd – 1/4 tsp
  Amchur pd – 1/4 tsp
  Salt to taste
  Oil for shallow frying
    Om podi for garnish 
  Green chutney as needed 
  Sweet chutney as needed
  Chopped Onion’s
  Chopped Coriander’s
  Method 
  For Chole 
  • In a kadai heat 1 tbsp of oil.
  • Add onion and saute them till they turn translucent.
  • Add the chopped tomatoes and cook them till they are mushy.
  • Cool the mixture and blend them in a mixer to a smooth puree.
  • Heat rest of the oil in a pan add  add cinnamon, star anise,cardamom.
  • Add the tomato onion puree and boil them for few minutes.
  • Add red chilli pd , turmeric pd, cumin pd, coriander pd , channa masala pd and mix them well.
  • Simmer and cook the gravy till the raw smell goes off.
  • Add the cooked channa and water as needed and cook the gravy till oil separates on the top .
  • Chole is ready !! 
  For Tikki 
  • Boil the potatoes, peel the skin and mashed them well.
  • Add boiled peas , red chilli pd , turmeric pd, cumin pd, garam masala , amchur and salt to taste.
  • Mix them well and divide them to equal balls , press them and make discs.
  • Heat the tawa and place the disc , drizzle some oil and cook them in simmer from both the sides till they are light brown from both the sides.
  • Tikki are ready !!
  To assemble 
  • In a plate pour in some chole, place the tikki on top.
  • Garnish it with chopped onions, chopped coriander, some green chutney , sweet  chutney .
  • Sprinkle some ompodi and serve hot .

Today we are landing on U after T for thai cuisine , For U I chose  Uruguay which is officially called eastern republic of Uruguay a southeastern region in south america. Uruguayan culture is strongly influenced by Europe the language spoken here is Spanish and some speak a mix of Italian and Spanish which is called Cocoliche. Meat is a fundamental part in this country and dish prepared with dulce de leche our very famous here. So for today I chose two addictive dishes you will sure like it 100% as it contains the delicious dulce de leche.Alfajores are short bread cookies prepared which is sandwiched between in between dulce de leche. Panqueques de dulce de leche  is a sinful dish and a perfect breakfast or snack to enjoy, By sinful I really mean it . It is sent me to heaven I, My daughter and H we totally enjoy the stacked crepes a lot .. Again desserts are following , I really couldn’t stop my self doing a dessert again today , feeling fulfilled and happy about both dishes I made for U  specially.   Butter – 2 sticks (at room temperature)
  Sugar – 1/2 cup
  Vanilla extract – few drops
  Dulce de leche – 1 cup


  Method 
  • In a bowl whisk the butter till smooth and creamy.
  • Add sugar and vanilla extract to it and  Mix them well.
  • Now add flour and combine them till it forms a soft dough.
  • Preheat the oven to 350 F .  On a cookie tray line a parchment paper.
  • In a floured surface roll the dough.Cut them to circles or any shape you like.
  • Place the cut cookies on the parchment paper and bake them at 350F for 8-10 mins.
  • Once done cool them on a wire rack while they are still sitting on the cookie tray.
  • Take a shortbread cookie and spread some dulce de leche and sandwich them with another cookie.
  • Can be stored for few days in the refrigerator in an airtight container.

  Ingredients 

Breakfast Pancakes  All purpose Flour – 2 cups
  Heavy cream – 1/2 cup
  Milk – 1 – 11/2 cups
  Vanilla extract – few drops
  Sugar – 4 tbsp
  Dulce de leche – 1/4 cup
  For Garnish 
  Chocolate syrup
  Icing sugar
  Strawberries
  Method 
  • Mix all the ingredients in a bowl excluding dulce.
  • Mix them well and form a lup free batter.
  • Heat a skillet and pour one ladle of batter in it. You can make it thin if your like.
  • Once you see it is light brown from one side flip and cook the other side.
  • Once done , do the same for the rest of the batter.
  • Once all the crepes are cooked .
  • Take a crepes and spread dulce de leche in one side.
  • Sandwich it with other crepes and repeat the same till you finish stacking all the crepes.You can also spread the dulce de leche and roll each crepe serving is as you wish.
  • Dust it with icing sugar and drizzle some chocolate sauce.
  • Garnish it with fresh fruit, I used strawberries.
