Mokkapalat ( Chocolate Brownies Finnish style) | Finnish Chocolate Pudding ( Light and silky version) ~ Finnish Cuisine Recipes

Finland Traditional recipe

For to day its the letter F and I first thought of making france like all did but then changed to finland which I really want to explore.
Finland officially called as republic of finland in Nordic country of Northern Europe. People here are called as finns and they speak Finnish.Finnish cuisine has the continental style of cooking and they use whole meal product like rye, oatmeal, barley a lot in their diet and one of the famous berries found here is Lingonberries. Many of dishes  are prepared by stewing method in the oven.Here the cuisine is very similar to the Swedish  and have resembles from Russian and Germany too.There some traditional dishes here prepared only on some festival and not on a daily routine like mämmi in Easter/ Christmas. There are 3 meals per day here : Breakfast, lunch and dinner. In all the schools there Free hot lunch is provided to the students studying there, so taking a lunch box to school is not common here.. The lunch is always consumed warm, which is a single course meal with salad, bread and dessert. There are various kind of breads and soup made in winter as its super cold out there. 

I actually remember my class mate is it finland and we spoke a year ago and she was telling me that it is bright here in the night 12 even no darkness black sky I have seen, I was totally shocked then recollected my geography that her country come under arctic circle and they so have ” Nightless night” in the middle of the summer , the sun never sets beneath at all.These Night-less night would last from may to july and My friend used to tell that it was always bright and I never get sleep.But she was happy that even if it was mid night we were able to freely walk any were we want there, Thats cool right.

 Ok coming to the recipes I chose from this countries are too decadent and chocolate rich desserts. I know weekends are always busy but how about something sweet and easy  to make brownie and smooth chocolate pudding to enjoy. Chocolate always makes  be say yes , and today made two delicious chocolaty temptations which I , My H and my daughter enjoyed it thoroughly. I made a finnish style brownies and  a sinful light , gooey chocolate pudding from Finland. These two dishes are popular desserts make any time in a day and enjoyed in the country. There are many versions of brownies all over the country But finnish style is super Moist with and perfect graze or coffee flavored frosting topped on it. These brownies where super moist and was so tempted, I didn’t cut them to perfect squares that the only mistake I made I cut them when they were still warm as was unable to resist the flavor . My H even gave me good compliments for this flavorful brownies. The chocolate pudding was melt in mouth and super light as expected the potato starch really adds up lightness to the addictive pudding and My daughter licked them all( To mark she is big chocolate fan).  They actually have a other version of this pudding prepared in same way but oatmeal is added to it. The rice pudding I made earlier for danish cuisine is made in the similar way and is named as Jouluriisipuuro in finish .With no further ado we should move on to the recipe now . Adapted the brownie recipe from here and the pudding recipe from here .

Mokkapalat ( Chocolate brownie)

   Ingredients 

Chocolate brownie with chocolate icing
  All Purpose Flour -1 cup
  Sugar – 1/2 cup
  Milk- 1/4 cup
  Cocoa pd – 11/2 tbsp
  Baking pd – 1 1/2 tsp 
  Baking soda -1/4 tsp
  Egg replacer – 1 tbsp 
  Vanilla essence – Few drops
  Frosting 
  Icing sugar-1 cup 
  Melted butter-2 tbsp
  Coffee ( decoction ) – 1  1/2 tbsp 
  Vanilla essence – Few drops
  Shredded Coconut – For garnish 
  Method 
  • Grease a square cake/ Round cake pan keep it ready.
  • In bowl add egg replacer and dilute them  in 1/4 cup of water. 
  • Add sugar, vanilla essence and whisk it well till they combine well and are little foamy.
  • Mix in milk to the mixture .
  • Sift baking pd, baking soda and Flour   and mix it with wet mixture little by little.
  • Combine them well and pour them on the greased  cake pan
  • Bake them in a preheated oven at 350 F for 20-30 mins or till a thooth pick inserted comes out clean.
  • Once the cake is done keep it on the wire rack  to cool.
  • Meanwhile  we can make the frosting, In a sauce pan put all the ingredients and heat them it the sugar melts.
  • Invert the the cake pan and remove the cake.
  • Top the frosting on the cake  and it sets after a while.
  • Garnish with the shredded coconut.

Light chocolate pudding recipe  
  Ingredients  
  Milk – 1 cup
  Sugar – 3 tbsp
  Potato starch – 1 tbsp
  Cocoa Pd – 1 1/2 tbsp
  Vanilla essence – Few drops 
  Method 
  • In a sauce pan add milk sugar, milk, potato starch  and cocoa pd  .
  • Boil them till iy thicken and stir it constantly to avoid it from burning.
  • Add the vanilla essence and mix them well. Chill them if you want.But it gets set even in remove temperature too.
  • Serve with the ice cream or whipped cream.

    Chocolate brownies are very tempting.. They are soft and gooey inside. Oh, and chocolate frosting is the icing on the cake. How can one resist this!

    Chocolate pudding looks delicious and potato starch is a new ingredient for me.
