Triple decker dhokla

Dhoklas are very famous break fast/ snack time  dish from gujarat , as I said in  my before post we marwadi’s at our feast  normally serve dhokla as a starter . It can be any time when you are craving for. As you all wud have noticed some color bug has bit me and I think to cook colorful every time now a days ๐Ÿ˜› With no artificial colors used in food makes it more curious and attractive for the person having them ain’t it. So for todays rainbow surprise I have a rainbow sandwich dhokla , It is bcoz of H or what I really can’t figure out but sure some color bug has bit me .. My H generally loves to have some attractive and fancy looking food attracts him like a kid . So I have to make him something colorful every time, but to be notes he doesn’t like over food color added to the food so I had to think for a natural option to make the dhoklas colorful and here I am with these colorful dhoklas

I have always wanted to try this rainbow dhokla ever since I saw a picture in a magazine years back but that magazine didn’t have the recipe though. I wanted to try my own version of rainbow dhokla and to my surprise I didn’t know it would turn so eye catchy and impress my H badly.. This was a real surprise for him , he even started asking me how did I make it and how those dhoklas are sticking together , I was so happy he liked it a lot…This dhokla might look difficult but believe me its easy pesy job to make these beauties, I just takes a little patience and some time . If the dhoklas are ready then it is easy to assemble them together. Rainbow Sandwich Dhokla

      Ingredients
Sandwich dhokla recipe

      Rava Dhokla ( Recipe Here)
    (Note : Just skip turmeric and besan to keep
     it plain white dhokla.. this is similar to rava idli )
     Besan Dhokla  ( Recipe Here)
    ( Note: Follow the besan dhokla recipe 
     In sandwich dhokla)
     Green Chutney ( Recipe here)
     Tomato ketchup as needed
     Mustard sauce as needed

     Beetroot Dhokla ( For Red)
     Besan – 1 cup
     Ginger paste – 1/4 tsp
     Turmeric pd – 1/4 tsp ( optional)
     Oil -2 tsp
     Beetroot puree – 1/4 cup 
     ( blanch the beetroot and puree it in mixer)
     Salt as needed
     Water as needed
     Eno soda/ eno salt – 1 tsp
    
     Spinach Dhokla ( For Green)
     Besan – 1 cup
     Ginger paste – 1/4 tsp
     Turmeric pd – 1/4 tsp ( optional)
     Oil -2 tsp
     Spinach puree – 1/4 cup 
     ( blanch the beetroot and puree it in mixer)
     Salt as needed
     Water as needed
     Eno soda/ eno salt – 1 tsp
   

    For tempering
    Oil – 1 tsp

    Mustard seeds – 1/4 tsp
    Til/ sesame seeds – 1/2 tsp
    Green chillies – 3-4 No ( small)
    Sugar – 3 tsp
    Water – 3 tbsp

    For garnish  ( optional)
    Grated Coconut – 1 tbsp
    Chopped coriander – 1 tbsp 
    Colored capsicum

   Method

  • Mix all the ingredients in a bowl  with out lumps excluding eno soda .
  • Heat enough water in a steamer or idli cooker.
  • Grease a cake pan / dhokla plate wit oil or ghee.
  • After the water in the steamer boils , mix eno salt in the batter and fold them well quickly.
  • Now quickly transfer the batter to the greased cake pan.
  • Place the cake pan / dhokla plate on a steamer and cook it for 10-15 mins.
  • Then insert a tooth pick/ knife if it comes out clean the dhoklas are ready.
  • Let the dhoklas stand in the cake pan for 5 mins.
  • Slide in the knife to loosen the corners of the dhokla in the pan.
  • Invert the pan on a plate and let it cool a bit.
   Note : Do the same for both spinach and beetroot dhoklas. Keep the batter to idli batter consistency..
   For tempering 
  • Heat oil in a sauce pan, add mustard seeds, sesame seeds, let them splutter.
  • Add green chillies and saute them . If you want you can also add curry leaves for tempering.
  • Now add water and let it boil well.
  • Add sugar and let them dissolve in water.
  • Your tempering is ready to be poured on the dhoklas.

  To proceed

  •  Now that all you dhoklas are ready it time to stack them up.
  •  If all the dhoklas are thick then you can slice them to two and make them to equal size. ( you can make the dhoklas thin if you want to avoid this step) .
  • First I placed the green dhokla , spread some tempering.
  • Apply mustard sauce on it as needed all over.
  • Now place the White Rava dhokla on it
  • Again spread some tempering and tomato ketchup all over.
  • Now place the red dhokla , spread the tempering on it.
  • Apply green chutney all over it.
Dhokla with veggies
  • Now in the end place the yellow besan dhokla, spread the tempering and garnish with colored capsicum or coconut or coriander leaves.
  • Cut them to squares , warm it up in a microwave and serve.
