Vegetarian Pad Thai Recipe | Cold Thai Broccoli Salad Recipe |Gluoy Bwod Chee ( Thai Banana in Coconut Milk)~Thai cuisine

Today we are landing on letter T and my first choice was thai.Thailand is officially called kingdom of thailand .Thai cuisine is famous all over the world for the food here have some exotic dishes love by people all over the world.A traditional thai meal consists of rice which is called khao and with many accompaniments and stews. I wanted to make thai noodles from long time and so chose the very famous Pad thai . I made them the veg version and we enjoyed this mini thai meal a lot. I chose a very healthy and simple salad to go with the pad thai . For the dessert part I made the thai banana in coconut milk I have made them earlier but didn’t get a chance to post it but I have made a version of Thai style bananas earlier. So without further ado moving on to my mini meal from thai.

Pad Thai

  Ingredients 
Pad Thai with rice noodles  Thai Rice Noodles – 8 oz pack
  Garlic – 2-3 clove( chopped)
  Ginger- 1 tsp ( grated)
  Green chillies -1 No
  Soft Tofu –  1/2 cup
  Cabbage – 1 cup ( shredded)
  Coriander leaves – 1 tbsp ( chopped)
  Dry peanuts –  3 tbsp
  Oil- 2 tbsp
  Onion – 1 No ( chopped)
  Pad Thai Sauce 
  Tamarind paste -1 1/2 tbsp  ( soak tamarind in a little water for a     while and then mash them well to remove the tamarind extract)
  Soy sauce -1/2 tsp
  Red chilli sauce – 1/2 – 1 tsp
  Brown sugar – 2tbsp
  Pepper pd as needed
  Salt to taste
  Method 
  • In a sauce pan bring enough water to boil to cook the noodles.
  • After the water boils , turn off the flame and put the noodles in them.
  • Cover and let it sit for 4-6 mins till it is half done.
  • Drain the excess water if any and drizzle some oil and toss it so that the noodles doesn’t stick with each other.
  • Combine all the ingredients under pad thai sauce.
  • In a pan heat oil , add garlic , ginger and saute well.
  • Add onions and saute them to translucent.
  • You can also use bok choy if available else cabbage will to taste good. Add shredded cabbage and saute them well.
  • Now add capsicum and again saute.
  • Add the pad thai sauce and cook them till raw smell goes off.
  • Add the cooked noodle, salt to taste and mix them well.
  • Mix them and combine well.
  • Serve them warm.

Thai broccoli salad  Ingredients 
  Broccoli florest – 2 cups
  Lime juice – 2 tsp
  Red chilli sauce – 1/2 tsp
  Carrots – 1/2 cup ( julienned )
  Salt to taste
  Method
  • In a pan heat enough water and blanch the broccoli florets.
  • Drain the water and rinse the florets in cold water.
  • In a bowl add chilli sauce , lime juice and salt mix well .
  • Add the blanched florets and carrots .
  • Toss them well till coated nicely.
  • Refrigerate and serve them chilled.

Thai desserts  Ingredients 

  Coconut milk – 2 cups
  Banana – 1 No ( sliced)
  Sugar – 3 tbsp
  Vanilla extract
  Cinnamon pd – for garnish
  Method
  • In a sauce pan put coconut milk , sugar .
  • Heat them till the the sugar melts well.
  • Add the  sliced bananas and cook them for 2 mins till they just start softening.
  • Turn of the flame and serve them warm sprinkle some cinnamon on top.

    I'll happily start with the salad, then have the pad thai and finish this filling meal with the delicious dessert, a complete filling Thai dishes, drooling here even after having my dinner.
