Eggless Rainbow Cake Recipe

Hey all how are I am scheduling this post hopefully I might be flying in air to some were when this post is up, He he You’ll know soon were I am. I have been missing bm a lot and have always been waiting for mega marathon , when valli announced that it is going to be baking theme for April I really couldn’t resist myself from participating and so here I am again doing mega marathon. Last month Bm scored Half century and these girls had so much fun with the meet I was so jealous to see them do all the activities hope I was there to learn some techniques from the pros. Ok now coming to the day 1 Bm #51 , I sincerely apology as for every time I do Bm I am always in a hurry to do it for some reason so some might have photography faults , some may have appealing flaws . I started baking without thinking about any theme and here I am with a theme now. I made lots and lots of cookies first and then cakes too I also baked 2-3 breads but after seeing the huge cookies and cakes I changed My mind to just post cookies and cakes for the marathon so now you know I start with no planning 😛 Also It is not at all easy to bake every day I bakes only 2 weeks before , For baking for more easier than finishing all the baked goodies I had to share every thing with friends and those poor faithful friends who can’t hurt me and say no anytime had to take all the bakes I gave them. So proud of them , they are really brave hearts ;).. One of Our friend invited us for dinner and I just went to kitchen and started baking so that I can share the cake with them.They liked the cake and I was phewww one task accomplished.

For day 1 I chose to post a celebrating and colorful cake for the Crossing Bm 50 and stepping up to the next milestone , hearty congrats to all bm members. 6 layer Rainbow cake was in my to do list and I took this opportunity to bake this fabulous cake with is completely eggless and yes if you have only 1-2 pans of similar size then you need have little patience to enjoy the cake. I had 2 pans only and so had to bake the cakes in batches with took me half a day then comes the decorating part. I have kept it simple from out as it excessively filled with colors inside. Now moving on to the recipe and stay tuned for some baking recipes this month.

6 Layer Rainbow Cake

  ( Recipe is for 2 cakes , make the same for 4 more cakes) 
  Ingredients 
Baking marathon Recipe

  All purpose flour – 1 cup
  Yogurt – 1/2 cup
  Sugar – 1/2 cup
  Baking pd – 1 tsp
  Baking soda – 1/2 tsp
  Milk – 1/4 cup ( if needed)
  Vanilla extract – few drops 
  Oil – 1/4 cup
  Food colors – few drops ( Red, Orange, Yellow,Blue,Green, Purple)
  Butter cream frosting 

  Method 
  • Pre heat the oven at 350 C and grease 2  6″ pan with butter and dust some flour.
  • In a bowl sieve Flour, baking pd , baking soda and keep it aside.
  • In another bowl take yogurt,sugar, oil and mix them well.
  • Now slowly add wet ingredient to dry ingredient and mix them. 
  • After they are well combined divide them to two parts and add purple and blue in each part respectively.
  • Transfer them to greased pan and bake at 350 C for 30-40 mins till the tooth pick inserted comes out clean.
  • As I had only 2 pans of same size I baked the cakes in batches with different color dyes. So they measurement given is for 2 cakes and the same manner we have to bake rest of the 4 colored cakes.
  • Cool the cake for 5 mins in the pan and them invert it upside down.
  • Cool the cake complete on a wire rack , the cake has to be cool completely  before the frosting is on. If any dome formation then cut the cake.
  • Once the cakes cook, take a steady cake tray which can fit in your fridge and apply a dolpe of frosting on that place the purple cake them some frosting and stack all the other colors as shown in the pic.
  • Give the whole cake a crumb coat and refrigerate it for 30 mins . Then take out and give the final coat.
  • If you wish you can decorate the cake with M &M’s and sprinklers. 
  • I would recommend to leave the cake to set over nite in the fridge and cutting a slice to get the clean cut , I had no time to rest so had to cut the same day.

    Safe travel Manjula. You could have tried take away aluminium containers for baking. You might have to trim them finally to get the right shape, but its a small price to pay when you look at the convenience it gives.
