Ghraybey Cookies| Middle Eastern Butter Cookies

Ghraybey cookie is soft Butter cookie which is traditionally garnished with pistachio on top and it is a famous middle eastern sugar cookie which is made in weddings. The flavor of the cookie is the main part in giving them a distinctive aroma which is from rose essence. Traditionally rose water or orange blossom water is used to make this cookie but I added Rose essence instead.This is a perfect tea time cookie , we enjoyed it a lot.These cookies are shaped in different ways like round, crescents,diamonds or S shape but I gave it a flower shape as it has the rose essence in it. 

I know you might be wondering what I just took picture with two cookies believe me the cookies where are gone the previous day when all our friends came and we had a photography workshop at my home on some basic of a camera and photography. We had started the session in the afternoon so I made 100 masala vadai and 20 of these cookies, and a “cupcakes” to go with tea which I will be posting for this marathon, I took advantage of the session well for baking marathon  πŸ˜‰ We had so much fun throughout the session , we learnt a lot from a fellow friend who is a professional photographer and made our own light box too I have shared some of the pics I took of these Cookie in the session , I don’t know If i will ever get a chance to be a part of such talented photographers and I was so happy to see camera’s and camera accessories all over my home that day :). Only these passionate people will know How hard we work isn’t it. Ok chalo I will go on and on about the session if I start so let me move on to the recipe and yeah I had only 2 cookies to photograph hope I did justice to the 2 cookies πŸ˜‰ ..

Ghraybey Cookies

  Ingredients 

  Confectioner sugar – 1/2 cup
  Butter – 1 stick ( 1/2 cup) 
  All Purpose Flour – 1 1/4 cup 
  Rose essence – Few drops 
  Almonds or pistachios – Few
  Method
  •  In a bowl take butter which is softened in room temperature. 
  • Cream sugar and butter well till combined and smooth. 
  • Add rose essence and sift the flour on the creamed mixture.
  • Gently mix all the ingredients together till a dough is formed, if the mixture is crumbly you can add 1-2 tsp of milk if needed.
  • You can rest the dough in refrigerator to firm up but I made the cookie right away.
  • Roll the dough on a lightly floured surface , you can dust some pd sugar instead of flour on the counter top.
  • Roll the dough and cut them in desired shape using cookie cutter . Generally these cookies are made into balls and flatten using palm nut I gave it a shape with cookie cutter.
  • Place the cut cookies in a lined cookie tray.Press a almond sliver or pistachio on top of the cookie 
  • Pre heat the oven for 10 mins and then bake the cookies for 10-15 mins depending on your oven temperature . You can see slight browning from the sides, do not over bake the cookie.
  • Let the cookies stay on the hot cookie tray for a while then after they are set transfer it to a wire rack cool them completely and store them in a air tight container.

    Rose flavour must be such a distinct addition in cookies. I can well imagine how good it must be. And a photography session with friends sounds delightful! Btw i couldn't take my eyes off your cute tea strainer with the kettle handle!

    rose flower or orange blossom adds that soothing feeling to any dish whcih is typical of middle eastern recipes, your pictures and shape of the cookie just bring out that feeling to life….beautiful as always
