Akkaravadisal (Come On – Lets Cook Buddies) Entry 55

Here i am with another delicious recipe shared by +Aishwarya Srinivasan  for my event “Come on – Lets Cook Buddies” πŸ™‚ Lets see the recipe she has got for us today πŸ™‚

Introduction

This is My Last recipe for this Event. Thanks to Manju for giving me a wonderful opportunity to share my recipes in her Blog and thanks to all Bloggers who commented for my recipes.

Iyengar Famous Akkaravadisal is the yummiest recipe and  I dedicate this recipe to my family πŸ™‚ Akkaravadisal is prepared on 27th day of Margazhi month ( Koodaraivalli) and offered to Lord Krishna. In 27th Poem of Thiruppavai , Lord Andal says ” Mooda nei peidhu Muzhangai vazhivaara “.So, we prepare this recipe with lots of ghee.

Ingredient

Rice – 1/2 cup
Moong Dal – 1/2 cup
Milk – 2 cups (Boiled)
Jaggery (Powdered) – 3/4 cup
Water – 1/4 cup
Cardamom – 4
Cashews – 10
Golden Raisin – 10
Ghee – 5 tbsp.
Saffron – a pinch (Optional)
Edible Camphor – a pinch (Optional)
Milk – 1 cup ( Boil until it reduces to 1/4 cup, Rabadi) (Optional)

Method of Preparation

  • Dry roast the rice and dal until it becomes slightly brown color.
  •  Soak it in milk for 1 hour.
  • Add jaggery and water. Boil until it melts completely. Strain the dust.
  •  Pressure cook the soaked rice and  dal with milk until it cooked well. (4 whistle)
  • Once it is cooked, mash it well .
  •  In a pan add 1 tbsp. of ghee, roast cardamom, cashews and raisin. Add to the rice mixture.
  • Add Jaggery water, saffron edible camphor and remaining ghee. Mix well again.
  •  Add rabadi and mix well. But it is purely optional. I didn’t use it.
  •  Akkaravadisal is ready.

Please be generous to use ghee for this recipe.

 Wheat – Nutty ladoo is a very simple & nutritious Rajasthan recipe (called as Falodi/goondgiri). It is prepared in winter season to provide the essential strength to body. When added Goond, its suits best for the ladies who are expecting…

Ingredients

 1 Cup wheat flour
Β½ cup Ghee
 ΒΎ cup Powdered Sugar
 ΒΌ  cup Chopped almonds
 ΒΌ cup Dry coconut powder
 2 pinch Cardamom powder
1 pinch pepper powder

Method Of preparation

  • Heat the ghee in a deep pan. Add wheat flour and fry till it changes the color to brown.
  •  Switch off the flame & add powdered sugar, almonds, dry coconut powder, cardamom powder, pepper & mix well. Taste & adjust sweetness accordingly.
  • While the mixture is hot, make lemon sized ladoos (can add little melted hot ghee if you are unable to make proper balls)
  •  Store in air tight container after cooling the ladoos to room temperature.

Variations

 Can fry goond in ghee & add to the mixture for a healthier value & crunchy taste

Introduction

Hi !! Here is an simple and delicious recipe to make this yummy pasta . Smoking eggplant gives this pasta an lovely flavor and increases the taste of this delicious pasta πŸ™‚ . This is a flavorful pasta recipe .

Ingredients

Pudhina – 1/2 cup
Cheese cube – 2
Garlic gloves – 5 
Egg plant – 5 of medium size 
Olive oil-  2 to 3 tsp
Onions – 1 medium size- chop them finely
Pasta- 1 1/2 cups
Water -4 cups

 Method 

  • In low flame grill the egg plant till its colour changes.Let them to cool. Peel the skin and cut them into cubes.
  • In a mixer, blend egg palnt cubes, cheese cubes, garlic gloves and pudhina till smooth.
  • In large vessel boil water and add 3 tsp of salt. Add pasta. Don’t over cook them. Drain the pasta when it turns into opaque cream color.
  • Mean while in a pan, add oil.Saute the onions and add the paste. Add water if sauce is thick. Add pepper and salt as per your taste.When raw smell goes away add the pasta.
  • Turn off the heat.Mix well .Now ready its to serve.

Aviyal (Come on – Let cook buddies) Entry 52

Cooking Tips

While coconut products such as creams and milks have health benefits, the fat content is usually high so opt for tomato bases rather than creamy curries or use low-fat yogurt as a substitute.

Introduction 

Aviyal  is mainly prepare in  Kerala as well as Tamilnadu. Adai Aviyal is the famous recipe in Udupi Cusines. It is must for Onum festival. It is a thick mixture of vegetables, curd and coconut seasoned with coconut oil and curry leaves. Vegetables commonly used in Traditional aviyal are  plantain, pumpkin, carrots, beans, brinjal, cucumber, chow chow, drum sticks, snake gourd and avarai. Carrots, beans etc. are recent introduction, while the Keralan Avial includes bitter gourd also. Some people prefer to skip curd or substitute it with raw mango or tamarind pulp. This dish can be made into a semi-solid side dish.

Today I made Aviyal with the available vegetables in my place.

Ingredients

Carrot – 1 medium size
Beans – 6
Peas – 1/4 cup
Brinjal – 3 small size
Drum sticks – 5
Pumpkin – 1/2 cup
Potato – 1 large
Boiled Plantain – 1/2
Water – 1/2 cup
Salt to taste.
Oil – 1/4 tsp
Cilantro for garnishing.
Sour curd – 1/2 cup

For grinding

Shredded Coconut – 1/4 cup
Chilli – 3
Cumin Seed – 1/4 tsp

For seasoning


Coconut oil – 1/4 tsp
Mustard seed – 1/8 tsp
Urad dal – 1/4 tsp
Curry Leaves – 1 string

Method of Preparation

  •  Grind coconut, chilli and cumin into a fine paste and keep it aside.
  •  Add oil in a pan, add mustard seed , urad dal and curry leaves, fry till urad dal turn slightly brown and keep it aside.
  • Chop all the vegetables into equal size. Add, oil in a pan. Add carrot, beans, potato and drum sticks, fry them for few minutes.
  • Then add Brinjal, peas and pumpkin and Cook them by adding water and salt.
  •  Once it is cooked, add plantain, grinded paste and seasoning to that and mix well. Switch off the flame. Add cilantro.
  •  Once it is completely cooled add sour curd to that.
  •  Serve with Adai or Cooked Rice.

Note

We need to boil for few minutes, after adding the coconut mixture. Boiling coconut will produce bad cholesterol to your body. That’s why I skipped that step.

Paneer Fritters (Come on – Let cook buddies) Entry 51

Introduction 

             Here comes my last dish for this really enthusiastic contest…PANEER FRITTERS…This is one of my personal favorites…A really delicious healthy choice for an energetic snack time….
             I have the habit of making paneer at home…I never use to buy paneer from shop…Hope u all food lovers are familiar with making paneer at home..So i am not going to that…Letz straight away come to ingredients and procedure…

Ingredients

Paneer – 2 large tea cups (Your choice…I took two cups)
Oil – 7 Tablespoon (large)


For Batter

Chickpea flour –  3/4 cup
All purpose flour/ Maida – 1/2 cup
Corn flour – 1/4 cup
Baking powder – 1/4 tsp
Turmeric powder – 1/8 tsp
Garam masala  –  1/4 tsp
Baking powder – 1/4 tsp
Pepper powder – 1/2 tsp (small)
Chilli powder – 1 tsp (small)
Asafoetida powder – 1/8 tsp
Ginger – garlic paste – 1 tsp
Coriander leaves – 1 tbsp (chopped)
Sodium bi carbonate/baking soda – 1 pinch
Salt – 1/2 tsp
Water – accordingly for a thick batter

Method

  • Mix all the ingredients for batter to make a thick batter.
  • Heat the oil in a deep bottomed pan/kadai..
  • Dip the paneer cubes in the prepared batter and deep fry the paneer cubes till all sides of paneer cubes turn golden brown..
  •  Delicious paneer fritters are ready to serve …Can be served with tomato sauce,chilli sauce or any other dips or as such…I use to try with dips and without dips each time when i prepare this snack…Taste is simply awesome in both cases…You food lovers also try this delicious snack…..

Cabbage-Raw Banana Cheesy Wrap (come on – let cook buddies) Entry 50

Here i am with another delicious entry being shared for my event Come on – Lets cook buddies by +Sneha Jain . Lets move on to today’s Delicious recipe by sneha πŸ™‚

Over to +Sneha Jain πŸ™‚

Introduction

 It is a popular North Indian breakfast recipe & is quite filling & satiating. I am gonna give it a different taste by using cabbage instead of cauliflower & make it little fat using raw banana & create a melting sensation to the taste buds by adding cheese..! thus making it an international flavor..

Ingredients 

2 cups chopped Cabbage
1 cup boiled raw banana (smashed)
3 Green Chilly (finely chopped)
Β½ tsp pav bhaaji masala
1 tsp chilly powder
2 pinch turmeric powder
Β½ tspn Cumin powder
ΒΌ tspn dry ginger powder
 2 tbsp chopped coriander
 Few drops Lemon
3 cubes Grated Cheese
 2 tspn oil
Salt to taste

For Dough 

 2 cups whole-wheat flour
1  cup Milk (Use more as needed)
1 tsp Ghee
Salt to taste
Ghee / Oil for frying

Method of Preparation 
  • First make the dough & rest it for 30 mins.
  • Knead all the ingredient under ”dough” & make it as chappati dough.

Stuffing

  • Heat oil in a wok & first add green chilly, then raw banana & lastly cabbage . Fry for 5 mins.
  • Add the other ingredients except cheese & cook for about 2-3 mins.
  • Stuffing is ready.

Now lets make the wraps or parathas

  • Make lemon sized balls & roll like a chapati, but a little thicker.
  • Spread 2-3 tsp of stuffing evenly on one chappati & Top with grated cheese(approx one cube). Cover it with another rolled chappati. Make sure the edges are sealed.
  • Heat a flat tava (griddle) on medium heat, once hot put this wrap on it. Cook for about a minute & then flip.
  •  While the other side is cooking, apply some ghee/oil on the side facing up. Again flip & cook the side with ghee/oil till its well done & golden in color.(can use a wooden press to cook evenly)
  •  Repeat the process for other side too. Once both sides are well cooked remove from griddle.
  • Yummy cheeeesy wraps are ready. Serve hot with Green Chutney/Sweet chutney/Sauce/Curd

If you want to avoid fats, here by the Cheese, you can make the wrap as follows:

  • Make large lemon sized balls out of the dough.
  • Roll to a small chapathi & place 2-3 tsp of stuffing.
  • Wrap it again by folding it into square shape or balls as shown
  •  Dust it with flour & roll to thick chappatis & fry as above.

Variations

  • You can use water too instead of milk for dough
  • You Can make the wraps by using only cabbage or raw banana separately.

Sharjah Shake (Come on – Let cook buddies) Entry 49

Hi friends and participants of event Come on – Lets Cook buddies πŸ™‚ Sorry for delaying as you all know i had so many probs going on with my lappy and lost most my pics so am redoing all the recipes and will finish posting the event entries first and then will post the round up :). I really appreciate all your patience and support you been giving :). Lets move on to today’s entry … Its Bini basheer again with us to share an delicious drink recipe with us … With out further ado Over ti Bini πŸ™‚

Introduction

   Here comes my dish….ITZ SHARJAH SHAKE…Itz  really a  tasty shake…A really tasty drink to beat this unbearable summer season..The recipe is very simple…..Itz a very energetic drink….U guys just try it out when u get time…or after reaching from job…Itz an easy way to chill ur stomach..So here comes the recipe for my favorite energetic drink….

Ingredients

   Frozen milk – 1/2  litre (better if you buy 1/2 litre cover milk and freeze it…It will be easy for to       smash into small chunks it before you grind it in a blender)
  Banana (small) – 2
  Nutella  –  2 tablespoon
  Cashew nuts  – 10
  Peanut – 10
  Sugar – 4 tbsp (If needed, add more)
  Dates – 1 (chopped after removing seed)
 Cadbuary dairy milk – A small piece (Optional, I added..I am really crazy about chocolates)
  Cardamom powder – a small pinch
  Boost/Horlicks – A pinch (optional as Nutella is the best choice)
  Peanut candy/chikki – a small piece (chopped) – optional. I added

Garnish
Garnish is completely your choice..I garnished this chill chill drink with
 Cherry – 1
 Cashew nut (crushed) – 3 ( You can crush and mix it with the drink…It will add more taste when we have the drink)
 Ice cubes (crushed) – 1

Method

  • Smash and Crush the frozen milk into chunks with a chapatti roller (starting from the sides of the cover containing milk)
  • Grind the crushed frozen milk with all the ingredients numbered 2 to 11 in a blender for 1 to 2 minutes..Don’t over grind it…It will loose it’s thick paste texture
  • Garnish it with cherry, crushed ice cube and chopped cashew nuts..

          Yummy healthy SHARJAH SHAKE is ready…The very important point when one makes this delicious drink is to avoid water totally while grinding….Consume as soon as u make it…As time passes, it will loose it’s chillness…An easy recipe to entertain your guests…So You guys try it out.

No bake Cheerio Cookies

Am so happy to share this yummilicious no bake cookie recipe as it can be prepared in minutes and kids will surely love the chocolaty goodness of these cookies and an addition of cereal make it a little healthy for kids. I made these cookies for my kidoo’s last day at school snack   πŸ™‚ .. All my kidoo’s friends loved this delicious cookie and enjoyed them a lot. I have to thank +Priya Suresh  for the recipe she shared in her blog No bake nutella covered cornflakes cookie  from which i adapted this recipe and added my own touches to the recipe.

Adapted from Priya’s verstile recipe 

Ingredients 

1 cup Red candy melts ( I used candy melts you can make them with any chocolate chips too)
4 tbsp Nutella spread
2 cups Cheerios ( I used honey flavour )
1 tsp Vanilla essence
Few sprinkles of sprinklers

Method

  • Take the candy melts,nutella spread,vanilla essence in a microwave safe bowl,cook for 1-2 minutes in high power,stir well,add immediately the cheerios ,mix everything well..
  • Drop gently enough nutella covered cheerios in a muffin paper cups and sprinkle few sprinklers over them,let them cool completely, arrange in fridge for half an hour or till they are set..
  • Now you No bake cheerio cookies are ready go into your tummy πŸ™‚

Mango Chocolate Marble Cake – Eggless & Butterless

Hi friends !! Sorry i had been absent in this blogging world for about a month i hope.. My lappy crashed and i was missing it badly for so long hope all are doing gud :).. Sorry bcoz of this was unable to hop to you your lovely blogs πŸ™‚ Now am back with lots of delicious recipes to come..

 The much awaited reveal date for pizza has already come and sorry that am the last to complete my challenge. Thanks to +Priya Suresh  aks for this lovely group she created in the name of “Home baker challenge” where we get to bake each  month with different and delicious baking challenges being challenged  by the group members. So glad am a part of it and happy to finish my second  challenge. This months challange “Mango chocolate marble cake” was  challenged by my dear +Sangeetha M  of ” Spicy treat”. Am a mango lover and this was the perfect challenge for this season πŸ™‚ Thank you for this delicious challenge sangee we loved and enjoyed every bite of this cake :).. 

 Ingredients


All Purpose flour-  2 cups
Baking powder- 1 and 1/2 tsp
Baking Soda- 1/2 tsp
Salt -1/4 tsp
Sugar – 3/4 cup
Oil – 5 tbsp(i used Extra light Olive oil)
Vanilla essence-1 tsp
Chocolate chips- 1/4 cup ( melt them in microwave for 30 minutes at a time and repeat this till completely melted string them every 30 minutes interval) 
Mango Pulp-1 cup ( i used fresh mango pulp)
Milk- 1/4 cup
Buttermilk     1/4 cup 

How to make Buttermilk  for cakes ?


Ingredients

Milk (just under one cup)
1 Tablespoon white vinegar or lemon juice

Method :

  • Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.
  •  Add enough milk to bring the liquid up to the one-cup line.
  •  Let stand for five minute. Then, use as much as your recipe calls for.
Now lets move on to the cake recipe πŸ™‚

Method ( For preparing cake)

  • Preheat oven to 350 degree Fahrenheit and Grease & line the pan with parchment paper.
  • In a large mixing bowl, combine sugar & oil then to this add mango pulp, milk, yogurt, vanilla, buttermilk and mix well.
  • In another small bowl, combine flour, baking soda, baking powder & salt mix and now add this flour mixture to the mango-milk mixture and mix until everything combine well.
  • Now take a small cup, add Melted chocolate and mix well.
  • Then transfer half of the mango batter to another bowl and add this cocoa paste and combine well.
  • Now both your mango batter & chocolate batter are ready.
  • Then to the lined loaf pan or a round cake pan , add mango n chocolate batter alternatively like a checker board pattern or simply fill with vanilla/mango batter then add remaining chocolate batter in 3 small circles, make swirls using a skewer as u like.
  •  Tap the pan gently to set the batter evenly and bake it for 50-55 minutes or until done(check by inserting a knife or toothpick which should come out clean). Voila our yummy mango chocolate marble cake is ready πŸ™‚

Notes

  • I used  fresh mango pulp  for this recipe but store bought sweetened mango pulp but reduce the sugar to 1/2 cup .
  • This cake won’t rise too much so u can fill up to 3/4 of the pan, as i wanted to show the checker board marble pattern in detail added only half batter, 
  • But u can make it smiple marble pattern by adding mango butter first then pour the chocolate batter and make swirls as u like..
  • U can also add chopped nuts to this. 
  •  Instead of melting the chocolate an adding to the chocolate mixture you can use Cocoa Powder 1/4 cup ( mix with 2 tbsp warm water) and mix them for chocolate batter. 
  • I used melted milk chocolate chips  you can use dark chocolate chip even.
  • I also made a muffin out the extra batter left

Green Paratha

Paratha’s are famous north indian bread which prepared in various way . It can be stuffed or just mix with some veggie’s they taste really yummmm. One such paratha am going to share today is green paratha .In this green paratha we are going make use of all green leafy vegetable and increase the nutrient content of normal parathas . This recipe is from Homely Kitchen.


Ingredients

 1 cup chopped green leafy vegetable (  I have used  Lettuce, methi leaves,coriander leaves and small amount of fennel leaves)
2 no green chilli
1/4 tsp each of coriander powder
1/4 tsp amchur(laundryman) powder
 1/2 tsp red chilli powder,
1/4 tsp turmeric powder
Salt to taste
2 tbsp ghee

Method

  • Chop all the greens and green chillies. In a bowl, add wheat flour and all  the greens
  •  Mix it nicely without water, add  salt and other dry masalas including chilli pd,  and green chillies, add ghee also, mix properly and add water slowly to make a nice tight dough.
  •   Heat tawa make balls from wheat flour a size bigger than lemons, roll it and cook it on tawa on both sides till its done, if needed apply a little ghee.  keep the flame on medium heat.
  •  Take out on plate and serve it hot with chutneys, tomato sauce or Curd, you can have it as it is too.
