Hi friends !! Am here  with another interesting and quick dessert recipe for my event “Come on – Let’s Cook Buddies”. Today we have with us friend of lovely blogger Shama nagarajan of  Shama’s easy to cook recipes. Shama has sent me an entry behalf of her friend Vasanthi srikanth. Introduction


 This is a simple and easy dessert recipe if you have some leftover cakes available.


        





Ingredients 

Chocolate cake – use the Leftover cake 
Full Cream- 1 cup 
Strawberry syrup – 1 tbsp (adjust as per your taste)

For Garnish

Cherry
Dark chocolate

Method 

  •  Whip the cream well and keep aside .Now take a cup or glass, put a little whipped cream into it.
  • Drop little  bit of strawberry syrup.
  • Place a small piece of cake on top of the cream.
  • Again top it with whipped cream and little bit of strawberry syrup.
  • Add little bits of cake and place a spoon full of cream and a cherry on top.
  • Grate dark chocolate and place it for decorating.
  • Then freeze it for 1 hour and serve chilled..

Today we have One more special entry for my event “Come On- Lets Cook  Buddies”:). She is a good friend and encourages me  now and then for my work. So happy that she was able to send me her entry . She is my senior in school we know each other from childhood :).She is very  kind hearted and jovial person .. Hi!! Myself, Sneha from Chennai (India). I am working as Manager- Operations (Recruitment & Consulting). Manju is my junior & have known her since her childhood. She is very creative & used to participate in all arts/crafts competition. Cooking was, is & always be a passion for her. Well, I used to HATE COOKING ! Bleehh…. One could rarely see me step into my kitchen. But off recently, started loving it … My inspirations from Manju & Master Chef J.
I am here to share Jain Jashn-e-khana, which means all my recipes would be –**NO Onion-NO Garlic-NO ginger**….. then how the β€œTASTE”….???

Introduction
 As the name goes, yes its pinky pinky berries, loved by almost all ladies! Not only that the paradise would also have something which; again, almost all ladies love.. yes ! pink roses ! Strawberries are Nutrient-rich and packed with antioxidants. It is widely appreciated for its characteristic aroma, bright red color, juicy texture, and sweetness..
Rose petals are flavoring agents & useful to beat the heat, maintain body temperature & controlling cancer growth.
Serving Size : makes 1 glass
Ingredients 
 5 medium sized strawberries
1 tsp dry rose petals (soaked in little water for atleast 2 hrs)
250ml Chilled milk
2 tbspn fresh cream
4 ice cubes
2 tsp sugar (or as per taste )
Method Of Preparation 
  •  Chop the strawberries roughly.
  • To get nice froth , first blend icecubes & fresh cream very nicely. It would give a creamy texture & huge froth as shown in pic. (this way you can avoid adding cream which adds fat & calories)
  •  Add on the strawberries & soaked rose petals along with the water & blend a little.
  •  Now add chilled milk & sugar & blend well.
  • Check and adjust sugar according to your preference and sweetness of the fruit.
  •  Enjoy the pink paradise & beat the heat !!!

Variations
  • You can add a small scoop of vanilla / strawberry ice-cream for extra richness and creaminess.
  • You can add whipped cream if you don worry the extra calories

Vegetable Biryani (Come on – Lets Cook Buddies ) Entry 17

Here i am with another entry for my event “Come on- Lets cook buddies” . Thanks to all who were encouraging me and appreciating me  for having this event . I know you all enjoying all the recipes shared by our non- blogger friends πŸ™‚ . Lets Move on to today’s entry . Today ‘s entry is shared by +Aishwarya Srinivasan . Lets see what she has got for us today πŸ™‚

Introduction 

Vegetable Biryani is a very famous recipe in all South Indian Restaurants. It is a Delicious Dish with lots of vegetable. Everyone will make their own style biryani. Lets look into My Style Vegetable Biryani.

Ingredients

For Rice

Basmathi Rice – 2 Cups
Cinnamon Stick – 1
Cloves – 3
Cardamom – 3
Oil – 1tbsp
Water – 3 cups
Salt to taste

For Gravy

Carrot – 2
Beans – 10
Peas – 1/4 cup
Cauliflower – 10 Florets
Potato – 2
Onion – 1 large
Tomato Paste – 1/2 tbsp.
Ginger Garlic Paste – 1 tsp
Green chillies -3
Mint Leaves – 1 bunch
Paneer – 10 cubes
Cashews – 10
Almonds – 10
Salt to taste
Cinnamon Stick – 1
Cloves – 3
Cardamom – 3
Bay Leaf – 2
Fennel Seeds – 1/4 tsp
Curd/Yogurt – 1/4 cup
Biryani masala powder – 2 tbsp.
Turmeric Powder – 1/2 tsp
Dry Kastoori Methi – 1/2 tsp
Cilantro – few
Oil – 2 tbsp.

Method of Preparation

  •  Soak Rice for 45 Minutes. Take a Microwave safe bowl, Add Soaked rice, Cinnamon, cloves, cardamom, oil, salt and water. Keep it high for 25 minutes. ( I used to prepare rice in microwave)
  •  Heat oil in a pan, add cashews, almonds and paneer. Slightly  roast them and keep it aside.
  • Add oil to the pan, add bay leaves, cinnamon, cloves, cardamom and fennel seeds.
  • Then add chopped onions and fry them for few minutes.
  • Add Ginger garlic paste.
  •  Now add the chopped vegetables (medium size) and salt. 
  • Cover it and cook them till they are half done.
  •  Add tomato paste, turmeric powder, kastoori methi and half bunch of mint leaves. Fry them.
  • Now add Paneer, curd, and Biryani masala powder and mix them. Let them cook for few minutes. Veggies should be 80% cooked.
  •  Once it becomes thick, Switch off the flame and add remaining mint leaves, roasted cashews, almonds. Mix well.
  • Gravy is ready. Now Mix them with Cooked rice.
  • Serve Biryani with Onion Raita.

Variation

I tried Brown Rice Biryani also using the same method.

Today am sharing about my cooking journey till now in her blog πŸ™‚ Am so happy to guest post in her space . Thank you priya for this great opportunity you have given me πŸ™‚ .She was so kind  to make me do this guest post for her . she is a good friend of mine which i have gained in this blogging world . Even though we haven’t met in person we chat often and crack  jokes  with some of our other mutual friends .She even helps me and gives me tips to improve my blog so glad that i found such kind hearted person . As she asked me for a Rajasthani recipe i planned to make a dessert for her bcoz we rajasthani’s start with a sweet always. Rice pakoda

We all will be having left over rice and will be wondering what can be done with it . Here is an delicious starter recipe from Homely Food . Thanks to meenu anuty for the wonderful idea to make use the leftover rice . These rice pakoda’s so very delicious and my H just loved this crispy treat. I made some minor changes to the original recipes by adding dill leaves to it for extra flavor and delicious taste. Lets quickly move to the recipe.
  

Ingredients 

2 cups rice 
1/2 cup Besan
1/4 cup rice flour
1/2 cup curd
2 chopped green chillies
1/2 tsp red chilli pd
1/4 tsp turmeric pd
1/2 tsp cumin pd
2 tbsp Coriander leaves chopped
2 tbsp dill leaves chopped
1 inch ginger finely chopped
Salt to taste
Oil for frying

Method

  • In a bowl take the leftover rice and combine all the ingredients mentioned above.
  • Mix well and see whether you are able make balls . If you are not able make balls and the mixture is bit dry then sprinkle some water and try to make balls.
  • In a pan heat oil and once the oil is hot enough to fry start sliding the balls in the oil.
  • Fry them till golden brown and keep them on a kitchen towel/ tissue so that excess oil is drained out .
  •  Crispy rice pakodas are ready to serve with any chutney .

Paruppu urundai kozhambu (Come on – Lets cook buddies ) Entry 16

Hello everyone πŸ™‚ hope you all had a fun filled weekend and a happy Tamil new year … Am here with another yummy entry for my event “Come on- Lets cook buddies”.This recipe is shared by +Aishwarya Srinivasan  πŸ™‚ Aishwaraya is going to start with an interesting tip , so without further ado lets see what yummy recipe we have got today .

Cooking Tips

Sesame oil Contains Omega 3 fatty acid. It acts as an Antibacterial agent and it is also good for high cholesterol. Adding sesame oil to Kuzhambu (Not to Sambar) gives unique taste and makes your recipe perfect.

Introduction

Paruppu Urundai Kuzhambu without Onion and Garlic (Brahmin Style) / Dal Balls gravy.This recipe is very easy to prepare. It is a protein rich recipe. Perfect for people who don’t eat Onion and Garlic. No need of streaming the Dal Balls.
Ingredients

Urundai:

Toor Dal  / Thuvaram paruppu- 1 cup
Channa Dal/ Kadalai Paruppu – 1/4 cup
Red chilli – 2
Asafoetida – a pinch
Salt to taste 

Kozhambu:

Sesame Oil – 1 tbsp.
Mustard Seed – 1/4 tsp
Fenugreek Seed – 1/8 tsp
Asafoetida – a pinch
Tamarind – lemon Size Ball (Soak in hot water for 10 min and squeeze it and take the juice)

Sambar powder – 3 tbsp.

Turmeric Powder – 1/2 tsp

Salt to taste
Hot water – 11/2 cups

Method of Preparation

For making Urundai
  • Soak the dals  together for 4 hours.
  •  Grind it along with all other Ingredients (Urundai Ingredients) to fine paste without adding water.If it is too dry, add little water and grind it.
  • Make it as a Small size balls. (Your balls should be hard. If it is loose, add little rice flour to that and make it as a hard balls. We r not going to steam the balls. So u must make hard ball else it will dissolve in Kuzhambu.)

To prepare Kuzhambu

  •  Add sesame oil in a pan. Then add mustard seed, fenugreek seed , asafeotida and curry leaves.
  • Then add Tamarind juice along with 1 cup of hot water. Once it comes to boil , add sambar powder, turmeric and salt.
  •  Bring them to boil well for few minutes, then gently drop the dal balls to that. (Don’t mix immediately)
  •  Let them cook for 5 minutes. After 5 minutes slowly all the balls will float. Slowly insert the ladle and check if any ball sticks at the bottom. If so, Slowly take them and let all the balls to cook for 10 minutes.
  •  After 10 minutes, add the remaining 1/2 cup of hot water to that gravy and let the balls cook for another 10 to 15 minutes.
  • Once it comes to kuzhambu consistency, Switch off the flame.
  •  Serve hot with rice.

Eggless cupcake (Come on- Lets cook Buddies) Entry 15

Hope we all know shama is a enthusiastic blogger of “shama’s Easy to cook recipes” . Hi gayathri!! welcome here and happy that you are a part of this contest. Tell us something about you?

My name is Gayathri Sriram ,a happy homemaker with two adorable daughters . I  bake often for my kids and cooking is my passion .Am here share my recipe of “Eggless cupcakes”.

Thank you gayathri.. Lets move on to the recipes gayathri has got for us today πŸ™‚

Ingredients

Dry ingredients

 2 and 1/2 cups of self raising flour
2 tablespoon baking powder
1 tablespoon baking soda
1/4 tablespoon salt
2 tablespoons sugar
1 can condensed milk

Wet ingredients

1/2 cup warm milk
2 tablespoon vinegar
2 tablespoon vanilla extract
1/2 cup melted butter

Method of preparation

  • Preheat the oven at 180 c for 10-15 minutes
  • Prepare muffin tins either lightly greasing it with cooking spray or line it with paper liners.
  • In a large bowl whisk together the dry ingredients and mix well.
  • Incorporate the wet ingredients into dry mix one by one stirring with a whisk simultaneously.Use electric beater if ere is any lumps seen.
  • Fill each muffin cup 3/4th full which is about 3 tablespoons of batter for each cup.Bake for about 13-15 minutes or until toothpick in the center comes out clean.Mine was done in 15 minutes.
  • Remove the muffin tin from the oven and allow it to cool for 5 minutes.
  • If you want to decorate the cupcakes allow it it to cool on the rack completely.
  • Now you can decorate your cupcakes with icing in whatever shapes you want.

Papaya Halwa ( Come on – Lets Cook Buddies) Entry 14

Here i am with another interesting and healthy entry for my event “Come on – Lets cook buddies” which is shared  by +Aishwarya Srinivasan . Lets see what is that recipe which aishwaraya has got for us today.

Introduction 
It is safe to eat Papaya during Pregnancy, as long as it is Ripe. A Well-ripened papaya is full of Vitamins and  Nutrients. Papaya helps to prevent and control constipation and heartburn. For these reasons, many  doctors recommend that pregnant women eat moderate amounts of ripe papaya. However, if u eat Unripe papaya, it is not safe. An unripe or semi-ripe papaya is rich in a substance called latex that leads to Miscarriage.

Again, this is also a very quick and easy recipe.

Today  aishwaraya has some cooking tips to share with us . Lets see whats that useful cooking tip .  Over to aishwarya πŸ™‚

 Blend portions of ripe papaya with milk and honey. This mixture is considered a rich source of nutrients for pregnant and nursing mums. 

Ingredients

Well Ripened Papaya Puree – 2 Cups (Not diluted puree)
White Sugar – 1/2 cup ( Increase the amount amt to your taste)
Cardamon powder – 1/4 tsp.
Ghee – 1 tbsp.
Nuts for garnishing.

Method of Preparation
  • Heat the tawa, add ghee to it.
  •  Once the ghee becomes hot, Add Papaya puree and Sugar to it.
  • Mix it till the sugar dissolves and do check the taste. (If u want to add more sugar, go ahead and add it. But 1/2 cup tastes good for me). Add Cardamon pwd.
  •  Uncover and cook till it reaches halwa consistency.
  • Garnish it and Serve hot or cold. 
Tips

If the mixture becomes very thick, make it as halwa pieces.

Pav Bhaji

Pav bhaji is my all time favorite and i make at home often πŸ™‚ As meenu anuty of Homely food is hosting an event i was searching recipe corner for some recipe and the first recipe name was ” pav bhaji”  couldn’t resist myself to make pav  bhaji again and post it here . I already have posted a ” Pumpkin pav bhaji” recipe . So this time wanted to post this yummy fast food dish . 

Ingredients

 4 dinner rolls or pav buns
 2 potatoes, boiled and mashed
 1 cup chopped onions
 1 tsp ginger garlic paste
 1/2 cup chopped tomatoes
 1/2 cup green peas
 1 cup grated carrots
 1 cup French beans
 1 no bay leaf
 2 no cloves
 2 no cardamon
 1 tsp Dhania pd
 1/4 tsp turmeric pd
 1/2 tsp cumin pd
 3 tsp pav bhaji masala
 1 tsp lemon juice
 salt to taste
 2 tbsp oil

For Garnish

 1/2 tablespoon Ghee / Clarified butter
 1/4 cup finely chopped onion
 1/4 cup chopped fresh cilantro

Method

  • Boil peas , potato , carrot beans and strain them.
  • Heat the oil in a wok over medium heat. Add  cloves , bay leaves, cardamon .
  • Then add  ginger garlic paste saute , then stir in onions .
  • Cook until onions are transparent. Add tomatoes, and cook until nicely mashed.
  • Stir in boiled  peas, carrots, beans and potatoes. Season with Red chilli pd , cumin pd ,dhania  pd, turmeric pd, pav bhaji masala, season with salt.  Keep on mashing the mixture with a masher till they are not visible.   My hubby like’s when some veggie’s are visible so i didn’t mash it completely .
  • Toast the dinner rolls or pav buns , and spread lightly with ghee. Serve garnished with butter,chopped onion, lemon wedge and cilantro.
Tips
  • You can use any variety of veggies you like .. Meenu anuty even suggested brinjal . I haven’t tried with brinjal will surely try it next time i make.
  • You can even try my “Pumkin in Pav bhaji”  for variation.
  • You can also try making green bhaji by adding all grean leafy veggies .
  • Misal pav is an perfect way to make bhaji for pav if you don’t have veggies available.

Introduction

I am so happy to share this yummy halwa , prepared for her first b’day after marriage.Hubby totally enjoyed the flavor of halwa. I am  very happy to be a guest on manju’s blog “Desi fiesta”.

Ingredients


200 gms sweetened condensed milk
200 gms milk powder
100 gms plain paneer
sugar to taste
cardamom 4 or 5
saffron bit to taste
ghee 2 tbsp
cashew to garnish


Method of preparation

  •  On a hot non stick pan add ghee. After ghee melts completely add condensed milk and stir well.
  •  When ghee and milk get blended add milk powder. stir continuously such that no lumps are formed.
  • Add paneer, and saffron milk stir continuously till it becomes thick and forms as a dough.
  •  Remove from stove and allow to cool in a bowl till its handy to make shapes.
  • After complete cooling add sugar to taste and make shapes.
