Here i am with an other interesting recipe for my event ” Come on – Lets Cook Buddies”. Am again  here with an interesting and yummy recipe being shared by my dear senior and a lovely friend +Sneha Jain. Today she is sharing with as an very healthy and yummy recipe which is my favorite Rajasthani tea time snack recipe πŸ™‚  Thank you sneha for this delicious  recipe πŸ™‚  Lets move on to this delicious recipe with out any further ado …

Introduction

 Split skinned green gram (Mogar dal) are  very rich in proteins. Must intake for vegetarians. But how to consume it apart from in a form of vegetable or dal…? Why not some crispy snack item out of it….? We shall make a protein packed tea time snack . Simple & anyone would nod a YES to try & taste it…

Ingredients

1 cup Mogar/Moong dal/ split yellow dal (soaked for at least 3 hrs)
1 Β½  cups Wheat flour
2 tsp chilly powder (can add more, according to preference   of spice)
ΒΌ tsp turmeric powder
3 tbsp oil (to be added while kneading the dough)
2 pinch asafoetida
Salt to taste
Oil for frying
Water

Method of preparation

  •   Drain the water from soaked mogar /yellow moong dal. Take the dal in a wide mouth vessel, add wheat flour, chilly powder, turmeric powder, asafoetida,oil & salt. Mix well. (taste & check spice & salt & adjust accordingly)
  •  Add water & make dough like that of chapathi. Rest it for about an hour.(can also avoid this)
  • Make small balls & roll all to thin chapathis as shown & keep aside.
  •   Heat a pan, add little oil & fry it one side, keep pressing it on the pan, not allowing it to puff as below:
  •    Press only on sides. Preferably can keep half the body of chapathi out of the pan & keep turning round with help of wooden press so that its evenly pressurized & cooked evenly crisp through out. (this avoids burning in middle of chappathi) (pic)
  •   Keep on a little lower flame than medium.(NOTE: maintain this through out)Now flip, add oil & fry again till golden brown by pressing.
  • The crispy snack is ready to along with our hot tea/cafΓ© .
Variation 

  •  Can add mint leaves powder for a different taste.

Ragi Banana Brownie (Come on – Lets cook Buddies ) Entry 32

Hi friends !! Am here again with an delicious entry being shared by +Aishwarya Srinivasan . This event is really becoming tough for the judges to select the a winner. Good thing is am not among the judgement part πŸ˜› As my H is going to help me by selecting the “yummiest recipe” . He is a great critic so am going to leave all the judgement part on him and 5 of our most popular Bloggers πŸ™‚ But there is a long way to go for the results as i have to complete posting all recipes and am trying all the recipe simultaneously πŸ™‚ and then will come the grand round up and then announce the results . So participants plz stay patient and keep supporting πŸ™‚ Now lets move to today’s recipe . This is another healthy and delicious recipe which +Aishwarya Srinivasan  is sharing with us today. As always she is going start with a cooking tip , without further ado lets move on to today’s recipe.

Cooking Tips

 After peeling onions cut in half and soak in water for about 10 minutes before cutting to avoid crying.

Introduction  

Ragi Banana Brownie is a delicious and Completely Healthy Fat Free Recipe. I made this for My Daughter’s Birthday Snacks for her Morning School. Kids loved it. Her Teacher tasted it and said ” It is just Perfect πŸ™‚ “.

Ingredients

1 1/2 cups All-purpose flour
1/2 cup Ragi / Finger Millet flour
2 cups Sugar
3/4 cups unsweetened cocoa powder
1 tsp. baking powder
1/2 tsp salt
1 cup mashed ripe bananas
1/4 cup unsweetened soy milk or almond milk
1/4 cup canola oil
1 tsp vanilla extract
Few Fennel seed Candy/ Sprinkles

Method of Preparation

  •  Preheat the oven to 350 F. Cover baking dish with foil and grease it and set aside.
  •  In a large mixing bowl, combine the ragi flour, all purpose flour, sugar, cocoa powder, baking powder and salt until well mixed.
  •  In another small mixing bowl, combine the mashed bananas, soy milk, canola oil and vanilla extract.
  •  Add the wet ingredients to the dry, mixing until just combined.
  • Pour the batter into the prepared pan , Sprinkle Some fennel seed candy/Sprinkles and bake for 25-35 minutes, or until a toothpick inserted into the center emerges clean. 
  • Allow brownies to cool before cutting into squares.
  •  Serve them with Ice Cream on top.
Variations

Can add chopped walnuts, raisin or chocolate chip to this mixture.

Hi friends !! Am here with another interesting entry for my event ” Come On – Lets Cook Buddies” πŸ™‚ Am so glad and happy that she sent me an recipe to share with you all . She is such an sweet person and very kind hearted  . She is a mother of a cute lil angel who is my daughter’s friend at school. Happy to introduce our new participant for this event – +Tessy savio  πŸ™‚ . Thank you so much tessy for  sending me an interesting and yummy looking recipe for my event πŸ™‚ .  She has been a great help to make paal kozhukattai for my SNC challenge . Hi Tessy πŸ™‚ Tell my readers some interesting things about you ? πŸ™‚

My name is Tessy . I live in U.S with my husband and daughter.I am from kerala. I came to know about this event from Manjula herself. Our daughters are classmates.

Introduction 

 I am here with the recipe of a sweet dish called Apple Toffee. Even though its named as Apple Toffee , its not related to Apple in anyway. It got its name from its shape..

Ingredients

Dry milk powder – 1+ 1/4 cups
Sugar -3/4 cup
Water -1/4 cup
Grated coconut-1 cup
Ghee- 2 tsp
Colour  –  1/4 ts p( you can take any colour)
Vanilla Essence -1 tsp
Cashewnut  Pd – 1/4 cup
Cloves – 25 nos

Method Of Preparation 

  • Take a thick bottom vessel and keep it in low flame, add sugar and water, Once the sugar is completely dissolved let it boil for 2 minutes.
  • Add 1 cup milk powder and stir until it has a smooth consistency
  •  Mix the finely grated coconut to the above mixture and stir continuously.
  •  Once it starts to stick to the vessel add the ghee.
  • When it becomes hard enough to so that you can shape it, add colour, essence and cashew-nuts pd , turn off the flame after stirring for 30  seconds.
  • Add the remaining 1/4 cup milk powder, then mix thoroughly
  • Now make small balls using the mixture and insert one clove in each of these balls to make it look like an apple.

Tips 

  • To make smooth balls apply ghee or oil on palm.
  • Attaching a couple of photos of the sweet I made at home.

Corn Patties (Come on – Lets cook Buddies ) Entry 30

Hi friends !! Here i am with another entry for my event ” Come On – Lets Cook Buddies” . This entry is again shared by +Aishwarya Srinivasan . She has got an healthy and delicious corn patties recipe to share with us today. Lets Quickly move on to today’s recipe … She has also got a very useful cooking tip to share with us today .. so without further ado Over to +Aishwarya Srinivasan ….

Cooking Tips


Fermenting in cold weather is slow, so it is advisable to use an insulated box to help fermentation.  An electric lamp kept inside the box can help fasten fermentation.  Covering the vessel of batter of curds with a blanket also helps.



Introduction

 Our family is the biggest fan of Subway “Veggie Pattie”. Today I tried Corn Patties , which are very healthy and easier than Veggie Patties.It is good for kids too..

Ingredients

Corn ( Fresh/Frozen) – 2 cups
All purpose Flour – 1 tbsp.
Cilantro – 1/2 bunch
Cumin Seeds – 1tsp
Chenna Dhalia/ Pottukadalai – 1/2 cup
Ginger Garlic Paste – 1 tsp
Green Chilli – 2
Garam masala powder – 1/4 tsp

Method of Preparation


  • In a blender, add green chilli, cumin seeds, cilantro, chenna dahlia, ginger garlic paste, garam masala. Make it into a coarse powder.
  • Add corn and 1 tbsp. of water and grind it into coarse paste.
  • Add flour and make it as a small balls. (Flour acts as a binding agent here). press the balls and make it as a small circle
  • Heat a non stick pan, Shallow fry the patties.
  • Corn patties are ready.

Variations

  • Deep fry the patties and make it as Corn pakodas.
  • Make the patties in big rectangle shape and keep it inside the bread with veggies and enjoy Subway patties in home:)

Quick Veggie Soup (Come On – Lets cook buddies) Entry 29

Here i am with another healthy and yummy recipe which was sent to me by my dear +Sneha Jain  for my event “Come On- Let’s Cook Buddies” hope you remember her .Even thou the event has ended for the participants I have to post their plenty of recipes and am trying them ASAP so that i can announce the results ASAP . Now coming to today’s participant she was my senior at school as i already said  and a  lovely person too πŸ™‚ . I should thank her a lot for being so patient in sending me all her delicious and healthy recipes in her busy schedule of work πŸ™‚ . She is with us again to share an delicious  and healthy recipe  soup today :). So lets move on and see the recipe which +Sneha Jain  is sharing with us all today πŸ™‚

Introduction

Soup is a primarily liquid food, generally served warm (but may be cool or cold). Best in winter & after heavy meal ( good source for digestion). Easy & healthy ! We shall make soup in 4 simple & easy way & in very less time..Try this No Onion No Garlic quick soup  cool days …

Ingredients

2 cups tomatoes (roughly chopped)
1 cup bottle gourd (roughly chopped)
Few spring onion leaves
Few coriander leaves
3 cups water
1 green chilly (chopped)
 tbsp butter

Masala/ Spices (For Seasoning )

2 pinch cloves powder
1 pinch cinnamon
1 pinch turmeric powder
1 pinch chilly powder
Few drops lemon juice

Method of preparation

  •  Pressure cook tomatoes, bottle gourd , spring onion leaves , coriander leaves, green chilly with water to 4 whistles (approx 15 mins)
  • Allow it to cool & blend in a mixer or blender nicely, till smooth.
  • Now strain the mixture through a strainer, you can skip this step also
  • In a vessel add butter, pour in the mixture add the items under β€œmasala/ spices”  list, bring to a boil
  •  Spicy & healthy soup is ready. Serve hot.
  • Can serve with fried bread cubes.

Kitchen Tips
  • To get soft idlies  wash , soak urad dal and keep it in fridge till you grind it and you can use that cold water for grinding .
  • While frying okra you can add a teaspoon of rice flour to make it crispy.

Introduction
I had tried the banoffee pie once at a restaurant and ever since I thought of making this at home. I found the richness of the banana with condensed milk to be very exciting. And the layered presentation to be very eye catching.
Serves : 2
Ingredients
Condensed milk – 1 Can
Digestive crackers/Marie biscuit – 5
Butter – 1/4 Cup
Whipped cream – 1/2 Cup
Banana – 2
Grated chocolate to decorate
I had refered to the below blog for the receipe and derived it to make a serving for 2.

Method of Preparation

Making of Dulce de Leche
  • Take a heavy bottomed deep and wide pan and fill it with 3/4 th water and boil it. Leave the unopened condensed milk can and boil it for 3 hours in simmer.
  •  Ensure that the can is totally immersed in water throughout.
  •  Longer the boiling duration, thicker the consistency of the dulce de Leche will be. Cool the container to room temperature and leave it in refrigerator till using it.

Base
  • Powder the biscuits and mix it with the butter. This is the base of the pie.
  • Whip the cream until we get soft and stiff peaks, either with hand or electric mixer.


 Arranging
  • Layer and set the powdered biscuit mixture in equal amounts in 2 glasses.
  • Spread the Dulce de Leche as the second layer
  • Slice the bananas and place it over the Dulce de Leche
  • Spread the whipped cream on top of the banana layer
  • Decorate with grated chocolate/cocoa powder finally
  • Set in fridge until served
Notes 
  •  Whipped cream can be replaced with vanilla icecream as well.
  • Refer online for different ways of making Dulce de Leche
  • Avoid opening the can of condensed milk when hot

Strawberry Sharbat Shake (Come on – Lets cook buddies) Entry 27

Cooking Tips

To control pests in rice and dals add few red chillies to it.

Introduction

Roohafza Sharbat the evening meals for breaking the fast, during Ramadan. The concentrate can also be mixed with water, which is a common preparation in the hot Indian summer.  Rooh Afza syrup is often mixed with kulfi Ice cream, and vermicelli noodles to make the Pakistani version of the popular Iranian desert Falooda.
Sharbat is popularly-believed cooling agents to our body. It gives nice aroma to ur recipes.

Ingredients

Strawberry – 5
Roohafza Sharbat Syrup – 1 tbsp.
Honey – 1 tbsp.
Whole Milk – 1 cup
Vanilla Ice cream – 1 scoop(optional)

Method of Preparation

  • Wash the Strawberries, Put into the blender. Add Sharbat Syrup, Honey and Milk to that.
  •  Blend it well and strain it using a Strainer.
  •  Enjoy your Summer with Strawberry Sharbat Shake.

Cracked Wheat Pulov (Come on- lets cook buddies) Entry 26

Here i am with another yummy entry for my event “Come on – Lets Cook Buddies by this enthusiastic non blogger  :).. Yes its +Aishwarya Srinivasan  … Lets see the healthy and yummy cracked wheat puloa recipe which +Aishwarya Srinivasan  is sharing with us today . Now +Aishwarya Srinivasan  will share a cooking tip and then continue with her healthy puloa recipe ..

Cooking Tips
To avoid browning of apples after cutting, apply a little lemon juice on the cut surface. The apples will stay and look fresh for a longer time.

Introduction

Cracked Wheat is an excellent source of Fiber. Cracked Wheat fits well in low – fat diet. It is good for High cholesterol and Diabetic patients.

Ingredients
Fine Cracked Wheat – 2 cups
Carrot – 1
Beans – 5
Peas – 1/4 cup
Cauliflower – 6 Florets
Onion – 1 large
Ginger Garlic Paste – 1 tsp
Fried Paneer – 8 cubes
Cashews – 5
Almonds – 5
Salt to taste
Cinnamon Stick – 1
Cloves – 3
Cardamom – 3
Bay Leaf – 1
Fennel Seeds – 1/4 tsp
Green Chillies – 2
Dry Kastoori Methi – 1/2 tsp
Cilantro – few
Mint – few
Oil/ ghee – 2 tbsp.
Water – 4 cups

Method of Preparation

  •  Heat oil in a pan, add bay leaves, cinnamon, cloves, cardamom, fennel seeds cashews and almonds.
  • Then add chopped onions and fry them for few minutes.
  • Add Ginger garlic paste.
  • Now add the chopped vegetables , green chillies, kastoori methi and salt. Cover it and cook them till they are half done.
  •  Add water to it and bring them to boil.
  •  Once the water boils for few minutes, add cracked wheat to that and mix without lumps. Boil it for 3 minutes.
  •  Garnish with mint and cilantro. Serve Pulov with Onion Raita.
Variations

You can also add boiled soy bean, Boiled butter beans to this pulov. U can make all kinds of pulov using cracked wheat.

Cooking Tips

For Crispy pakodas, add little hot oil in ur pakoda batter before frying.

Introduction



Black Bean and Soybean Sundal is rich in protein and tastes yummy. It is a healthy Snack recipe for both Kids and Adults.  

Black Bean is mainly used in Mexican dishes. It is rich in Dietary fiber that helps to lower the high cholesterol level and also 1 cup of black bean has 15gms of protein.White Soybean are consider as a source of complete protein and fiber. It is the alternative for meat in low fat diets.
Ingredients

White Soybean – 1/4 cup 
Black Bean – 1/4 cup
Chilli – 1
Shredded  Coconut – 1/4 cup
Mustard seed- 1/4 tsp
Curry Leaves – 1 string
Hing – a pinch
Oil – 1 tsp

Method of Preparation

  • Soak Soybean and Black Bean separately for 5 hours.
  •  Cook the bean separately in pressure cooker for 2 to 3 whistle.
  •  Drain the water Completely. Take off the skin from soybean.
  • Add oil in a pan, add mustard seed, curry leaves, hing, coconut. Fry for few minutes.
  • Add black bean and soybean and salt. Toss once, then switch off the flame.
Note

Don’t mix them too much. Soybean and coconut will also become black color.

Bitter Gourd Paruppu Usili (Come On – Lets Cook Buddies) Entry 24

Am so happy that my event had a great response and all the participants enjoyed it and some participants where telling me that they are already missing  my event :). Thanks to all non-blogger’s for submitting you delicious recipes for this event “Come on – Lets cook buddies”. I will be Posting all the recipes i got for this contest for now and after completing will announce the results . I know all are curious for the roundup will surely complete the posting and trying all recipes and then will announce the winners so till then enjoy all the recipe which i received  for my event :). Here i am with another healthy and delicious recipe from +Aishwarya Srinivasan  .. Lets move on to the recipe shared by +Aishwarya Srinivasan . 

Introduction

Nowadays I’m doing experiments in my kitchen and now I came out with this Wonderful Recipe. Thanks to Manju, for encouraging me.
My kid loved this Usili πŸ™‚  I swear, u will never find the taste of Bitter Gourd. U can pick any kind of veggie to make usili.
Ingredients
For Curry

Bitter gourd –  3 medium size (remove the seed and chopped)
Carrot – 1 large or 2 medium size (chopped)
Onion – 1/2 big size (chopped)
Oil – 1/2 tbsp.
Musrard Seed – 1/4 tsp
Whole Urad dal – 1/2 tsp
Salt to taste
Red chilli – 3
Jaggery powder – 1 tbsp
For Usili

Toor dal – 1/2 cup
Channa dal – 1/2 cup
Red chilli – 2
Hing – a pinch
Salt to taste
Oil – 1 tbsp
Method of Preparation

  •  Boil Bitter Gourd and Carrot in Pressure Cooker by adding some water. Once it is cooked drain the water completely.
  •  Soak the dals together for 3hrs. Grind it along with chilli , hing and salt into a coarse paste. If necessary, add little water.
  • Add a tbsp. of oil in a non stick pan, pour the dal mixture and sautΓ© them in simmer. After they will get stick to the pan, slowly break them with spatula into fine pieces and keep it aside. Usili is ready.
  •  Now add oil in another pan, add mustard seed, urad dal, red chilli, onion and salt. SautΓ© them for few minutes and add bitter gourd and carrot and cook them till the moisture is completely observed.
  • Switch off the flame and add jaggery , mix well. Curry is ready.
  • Now combine  usili and curry slowly and mix well. 
Note

  •  Don’t over cook the veggies. 2 whistle is enough.
  • Draining the water from veggie is very important. If it is too watery then the recipes will become messy.
  • When u make usili, if u r not able to break the usili into fine pieces in tawa, let the usili cool for some time and then u rub it using hand. If u grind the dals into coarse paste, u will not get this problem.
  •  Adding carrot will give natural sweetness to this recipe.
  •  Veggies should be seen. Do not finely chop it.
