I thoroughly enjoyed making all the fun cookies for this marathon and am so happy that I baked all of them which I had planned. As this is summer season I thought why not include a summer themed bake for the marathon. When I think of summer in India the first fruit comes to mind which is much awaited to enjoy is Watermelon, First I thought y not try a watermelon cupcake but then I changed my mind once this attractive cookie idea came to my mind. This is fun to make and you will surely enjoy the baking and the taste of this delectable cookie. The watermelon shaped cookie is perfect for any summer themed party or Picnic. What more can I say I just had so much fun and the outcome made every one of my friends say wowww!!! Now moving to the recipe…

Summer or Picnic Themed Cookies

Watermelon Cookie

Baking Marathon  Ingredients

  All purpose Flour – 2 Cups
  Butter – 1 1/2 stick
  Icing Sugar – 3/4 cup
  Baking pd – 1/4 tsp
  Vanilla Extract – Few drops
  Red and green Food color gel
  Mini chocolate chips – 1/4 cup
  Method
  • In a bowl cream room temperature butter , icing sugar till they are well combined.
  • Add baking pd , vanilla extract, and all purpose flour . Mix them to form a smooth dough.
  • Take a cup of the dough and tint them with red food color.
  • Roll the red tinted dough into a log , wrap it in a cling wrap and refrigerator for 1 to 2 hour. 
  • Divide the rest of the dough to 2 parts . Tint one part of the dough with green food color.
  • Roll the white dough in to 7 inch rectangle , place the red dough log in one corner and then roll the white dough over the red log . Then roll the green dough the same way into rectangle shape and place the log in one corner the same way and roll the log .
  • Cover the log with cling wrap and refrigerate for 2 hours.
  • Cut them to 1/4 inch thick slices, again cut them to half to form a semi circle slice.
  • Press the mini chocolate chips in the red part for the watermelon seeds. Do the same for all the slices.
  • Preheat the oven at 350 F , Line a cookie tray with parchment paper.
  • Place the prepared watermelon cookie on the lined cookie tray and bake the watermelon cookies for 9-10 mins .
  • Cool the cookies well and then transfer them to the wire rack and cool them completely.
  • These are perfect for any picnic or summer themed party’s . Enjoy!!
