Flaxy Soybean Uthappam (Come On – Lets Cook Buddies) Entry 36

Hi friends!! Here i am again with another healthy and delicious entry for my event ” Come On – Lets Cook Buddies” been shared by +Aishwarya Srinivasan  . This is going to be an very different and delicious recipe by +Aishwarya Srinivasan :). Lets see the recipe for this different and delicious looking Uthappam πŸ™‚   ….

Cooking Tips
If ladoos become dry , mash and mix them with milk and make small balls again to get the original taste.

Introduction 

Soybean with flax seed is very soft and yummy recipe. It is very healthy and easy to make . No need to ferment the batter. Use Non Stick Tawa for Making this uthappam and make it in low flame.

Ingredients

Soybean – 3/4 cup
Flax Seed – 2 tbsp.
Ginger – 1/2 inch
Green Chilli – 2
Salt – to taste
Rice flour – 3 tbsp

Method of Preparation

  • Soak Soybean and flax seed together for 10 hours.
  •  Grind it along with ginger, chilli, salt into a fine paste by adding water.
  • Batter consistency should be thick.
  •  Add rice flour and mix well. 
  •  Heat the non stick tawa, add little oil,  pour the batter and do not spread the batter.
  • Add little oil on top. Flip it to other side .
  • Once it is cooked well , Serve hot with Chutney and Sambar.

Gol Gol Gappas (Come on – Lets Cook Buddies) Entry 35

Here i am with another all time favorite street food which  is loved by all πŸ™‚ . Thanks too sneha i was missing this badly . Yes today’s recipe is shared by my dear friend +Sneha Jain n i know this is  all  time favorite street food  for every foodie :)… So without any further ado lets quickly see this delicious street food Golgappas been shared by +Sneha Jain …

Introduction

My love lust & life… Almost everyone’s all time favorite chaat! Yes.. GolGappas..  The name gol gappa refers to the crisp sphere (gol) that is placed in the mouth and eaten (gappa) one at a time. It’s a bubble like thing larger than the cute wide parted lips ! πŸ˜€

People think making puris at home is tedious , but its much simpler & crispy crunchy  snack.. Here we shall learn to make the puris so that you don’t get disappointed when your heart craves for paani puri & the shops are closed, or you end up getting puris that have lost there crispiness. If puri’s aren’t crisp the whole joy is disturbed..

Ingredients

1 cup rava/ sooji/ semolina
1 tbsp all purpose flour/ maida
Pinch of Baking Soda
Water
Salt to taste
Oil for Frying

Method of Preparation

  •   Mix sooji, maida, baking soda and salt in a wide mouth vessel. Now add warm water little by little to knead a stiff dough. (should be a little loose than the chapathi dough as semolina absorbs much water)

  • Cover it with a damp muslin cloth and keep it aside for atleast 2 hrs.
  •  Now make tiny tiny balls, roll & deep fry. This may be time consuming but makes difference .

Note – You can also make bigger balls, roll out thin rotis. Cut small small pieces with the help of a lid of any container.

Points to remember before frying 

  • Always ensure that the oil is hot before frying otherwise the puris will soak in excess oil and will not puff. Put a small testing puri. If it comes up fast then the oil is rightly hot.
  •  Also the oil should not be smoking hot or the puris will get burnt.
  •  While frying, press them in the center allow them to puff up.
  •  Now flip them over and let them cook. Take them out on a kitchen towel when they are light brown and crisp. I love little dark ones so I fried for a little more time.
  •  Let them cool. Later store in an airtight container.

Thank you to all  been  readers and friends for this great support and mainly i have to thank  all the non – bloggers who have been sharing lots of innovative recipes and working hard for making this event a great success :).. Lets Move on to today’s recipe shared by +Aishwarya Srinivasan ..

Introduction 

 This Smoothie is a perfect breakfast for kids who don’t eat fresh Veggies, Leaf and fruits πŸ™‚ It tastes Delicious and rich in Vitamins and Minerals.

Ingredients

Boiled Carrot – 1 medium size
Boiled Beetroot – 1/2 medium size
Spinach – 20 leaves
Strawberry – 4
Apple – 1 small
Banana – 1 large
Mango – 1/4 cup
Dates – 5
Gulkand (Rose petal)- 1 tsp (Optional)
Honey – 3 tbsp.
Roohafza/ Nannari (Any flavored sharabat ) – 1 tbsp.(Optional)
SoyMilk/ Almond Milk/ Heavy Cream – 2 cups

Method of Preparation

  • Blend all the ingredients in a blender without any chunks and Serve Cold.

Note

  • U can add any sweet fruits and veggies that goes with milk.

Moongadi /Protein packed Crispy Snack (Come On – Lets Cook Buddies) Entry 33

Here i am with an other interesting recipe for my event ” Come on – Lets Cook Buddies”. Am again  here with an interesting and yummy recipe being shared by my dear senior and a lovely friend +Sneha Jain. Today she is sharing with as an very healthy and yummy recipe which is my favorite Rajasthani tea time snack recipe πŸ™‚  Thank you sneha for this delicious  recipe πŸ™‚  Lets move on to this delicious recipe with out any further ado …

Over to +Sneha Jain 

Introduction

 Split skinned green gram (Mogar dal) are  very rich in proteins. Must intake for vegetarians. But how to consume it apart from in a form of vegetable or dal…? Why not some crispy snack item out of it….? We shall make a protein packed tea time snack . Simple & anyone would nod a YES to try & taste it…

Ingredients

1 cup Mogar/Moong dal/ split yellow dal (soaked for at least 3 hrs)
1 Β½  cups Wheat flour
2 tsp chilly powder (can add more, according to preference   of spice)
ΒΌ tsp turmeric powder
3 tbsp oil (to be added while kneading the dough)
2 pinch asafoetida
Salt to taste
Oil for frying
Water

Method of preparation

  •   Drain the water from soaked mogar /yellow moong dal. Take the dal in a wide mouth vessel, add wheat flour, chilly powder, turmeric powder, asafoetida,oil & salt. Mix well. (taste & check spice & salt & adjust accordingly)
  •  Add water & make dough like that of chapathi. Rest it for about an hour.(can also avoid this)
  • Make small balls & roll all to thin chapathis as shown & keep aside.
  •   Heat a pan, add little oil & fry it one side, keep pressing it on the pan, not allowing it to puff as below:
  •    Press only on sides. Preferably can keep half the body of chapathi out of the pan & keep turning round with help of wooden press so that its evenly pressurized & cooked evenly crisp through out. (this avoids burning in middle of chappathi) (pic)
  •   Keep on a little lower flame than medium.(NOTE: maintain this through out)Now flip, add oil & fry again till golden brown by pressing.
  • The crispy snack is ready to along with our hot tea/cafΓ© .
Variation 

  •  Can add mint leaves powder for a different taste.

Hi friends !! Am here again with an delicious entry being shared by +Aishwarya Srinivasan . This event is really becoming tough for the judges to select the a winner. Good thing is am not among the judgement part πŸ˜› As my H is going to help me by selecting the “yummiest recipe” . He is a great critic so am going to leave all the judgement part on him and 5 of our most popular Bloggers πŸ™‚ But there is a long way to go for the results as i have to complete posting all recipes and am trying all the recipe simultaneously πŸ™‚ and then will come the grand round up and then announce the results . So participants plz stay patient and keep supporting πŸ™‚ Now lets move to today’s recipe . This is another healthy and delicious recipe which +Aishwarya Srinivasan  is sharing with us today. As always she is going start with a cooking tip , without further ado lets move on to today’s recipe.

Cooking Tips

 After peeling onions cut in half and soak in water for about 10 minutes before cutting to avoid crying.

Introduction  

Ragi Banana Brownie is a delicious and Completely Healthy Fat Free Recipe. I made this for My Daughter’s Birthday Snacks for her Morning School. Kids loved it. Her Teacher tasted it and said ” It is just Perfect πŸ™‚ “.

Ingredients

1 1/2 cups All-purpose flour
1/2 cup Ragi / Finger Millet flour
2 cups Sugar
3/4 cups unsweetened cocoa powder
1 tsp. baking powder
1/2 tsp salt
1 cup mashed ripe bananas
1/4 cup unsweetened soy milk or almond milk
1/4 cup canola oil
1 tsp vanilla extract
Few Fennel seed Candy/ Sprinkles

Method of Preparation

  •  Preheat the oven to 350 F. Cover baking dish with foil and grease it and set aside.
  •  In a large mixing bowl, combine the ragi flour, all purpose flour, sugar, cocoa powder, baking powder and salt until well mixed.
  •  In another small mixing bowl, combine the mashed bananas, soy milk, canola oil and vanilla extract.
  •  Add the wet ingredients to the dry, mixing until just combined.
  • Pour the batter into the prepared pan , Sprinkle Some fennel seed candy/Sprinkles and bake for 25-35 minutes, or until a toothpick inserted into the center emerges clean. 
  • Allow brownies to cool before cutting into squares.
  •  Serve them with Ice Cream on top.
Variations

Can add chopped walnuts, raisin or chocolate chip to this mixture.

She is such an sweet person and very kind hearted  . She is a mother of a cute lil angel who is my daughter’s friend at school. Thank you so much tessy for  sending me an interesting and yummy looking recipe for my event πŸ™‚ .  She has been a great help to make paal kozhukattai for my SNC challenge . Hi Tessy πŸ™‚ Tell my readers some interesting things about you ? πŸ™‚

My name is Tessy . I live in U.S with my husband and daughter.I am from kerala. I came to know about this event from Manjula herself. Our daughters are classmates.

Introduction 

 I am here with the recipe of a sweet dish called Apple Toffee. Even though its named as Apple Toffee , its not related to Apple in anyway. It got its name from its shape..

Ingredients

Dry milk powder – 1+ 1/4 cups
Sugar -3/4 cup
Water -1/4 cup
Grated coconut-1 cup
Ghee- 2 tsp
Colour  –  1/4 ts p( you can take any colour)
Vanilla Essence -1 tsp
Cashewnut  Pd – 1/4 cup
Cloves – 25 nos

Method Of Preparation 

  • Take a thick bottom vessel and keep it in low flame, add sugar and water, Once the sugar is completely dissolved let it boil for 2 minutes.
  • Add 1 cup milk powder and stir until it has a smooth consistency
  •  Mix the finely grated coconut to the above mixture and stir continuously.
  •  Once it starts to stick to the vessel add the ghee.
  • When it becomes hard enough to so that you can shape it, add colour, essence and cashew-nuts pd , turn off the flame after stirring for 30  seconds.
  • Add the remaining 1/4 cup milk powder, then mix thoroughly
  • Now make small balls using the mixture and insert one clove in each of these balls to make it look like an apple.

Tips 

  • To make smooth balls apply ghee or oil on palm.
  • Attaching a couple of photos of the sweet I made at home.

Corn Patties (Come on – Lets cook Buddies ) Entry 30

Cooking Tips


Fermenting in cold weather is slow, so it is advisable to use an insulated box to help fermentation.  An electric lamp kept inside the box can help fasten fermentation.  Covering the vessel of batter of curds with a blanket also helps.



Introduction

 Our family is the biggest fan of Subway “Veggie Pattie”. Today I tried Corn Patties , which are very healthy and easier than Veggie Patties.It is good for kids too..

Ingredients

Corn ( Fresh/Frozen) – 2 cups
All purpose Flour – 1 tbsp.
Cilantro – 1/2 bunch
Cumin Seeds – 1tsp
Chenna Dhalia/ Pottukadalai – 1/2 cup
Ginger Garlic Paste – 1 tsp
Green Chilli – 2
Garam masala powder – 1/4 tsp

Method of Preparation


  • In a blender, add green chilli, cumin seeds, cilantro, chenna dahlia, ginger garlic paste, garam masala. Make it into a coarse powder.
  • Add corn and 1 tbsp. of water and grind it into coarse paste.
  • Add flour and make it as a small balls. (Flour acts as a binding agent here). press the balls and make it as a small circle
  • Heat a non stick pan, Shallow fry the patties.
  • Corn patties are ready.

Variations

  • Deep fry the patties and make it as Corn pakodas.
  • Make the patties in big rectangle shape and keep it inside the bread with veggies and enjoy Subway patties in home:)

Quick Veggie Soup (Come On – Lets cook buddies) Entry 29

Here i am with another healthy and yummy recipe which was sent to me by my dear +Sneha Jain  for my event “Come On- Let’s Cook Buddies” hope you remember her .Even thou the event has ended for the participants I have to post their plenty of recipes and am trying them ASAP so that i can announce the results ASAP . Now coming to today’s participant she was my senior at school as i already said  and a  lovely person too πŸ™‚ . I should thank her a lot for being so patient in sending me all her delicious and healthy recipes in her busy schedule of work πŸ™‚ . She is with us again to share an delicious  and healthy recipe  soup today :). So lets move on and see the recipe which +Sneha Jain  is sharing with us all today πŸ™‚

Over to +Sneha Jain 

Introduction

Soup is a primarily liquid food, generally served warm (but may be cool or cold). Best in winter & after heavy meal ( good source for digestion). Easy & healthy ! We shall make soup in 4 simple & easy way & in very less time..Try this No Onion No Garlic quick soup  cool days …

Ingredients

2 cups tomatoes (roughly chopped)
1 cup bottle gourd (roughly chopped)
Few spring onion leaves
Few coriander leaves
3 cups water
1 green chilly (chopped)
 tbsp butter

Masala/ Spices (For Seasoning )

2 pinch cloves powder
1 pinch cinnamon
1 pinch turmeric powder
1 pinch chilly powder
Few drops lemon juice

Method of preparation

  •  Pressure cook tomatoes, bottle gourd , spring onion leaves , coriander leaves, green chilly with water to 4 whistles (approx 15 mins)
  • Allow it to cool & blend in a mixer or blender nicely, till smooth.
  • Now strain the mixture through a strainer, you can skip this step also
  • In a vessel add butter, pour in the mixture add the items under β€œmasala/ spices”  list, bring to a boil
  •  Spicy & healthy soup is ready. Serve hot.
  • Can serve with fried bread cubes.

Eggless Nankhatai / Eggless Indian Cookies (Dome Shaped)

Cookies are all time favorite tea time or any time snack .Nankhatai’s are Indian short bread cookies  which is really easy to make and tastes delicious . They are simpler to the Pecan Sandies which is popular in U.S . Traditionally Nankhatai’s are made with ghee and they is an addition of gram flour and sooji in it. But today we are going to see a easy version of Nankhatai. Nankhatai are usually dome shaped , half sphere or dome shape, although they can be made in flat avatars, too. They are more powdery . So lets quickly look for this easy and quick Indian Cookies recipe. Thank you for this delicious recipe +Meena B  anuty πŸ™‚  Click here to see Meenu anuty’s Nankhatai . Ingredients

All Purpose Flour /Maida – 1 cup
Unsalted Butter – 1 stick (1/2 cup, 4 oz) at room temperature
Powdered Sugar – 1/2 cup
Nutmeg Powder – 1/4 tsp
Cardamom Powder – 1/4 tsp
Baking Powder – 1/4 tsp
Salt – 1/8 tsp

Method

  • Preheat oven to 350 F or 180  C.
  •  In a mixing bowl, combine powdered sugar  with the softened butter until mixture is light and creamy.
  •  Add Nutmeg Powder and Cardamom Powder and mix well.
  •  In a separate bowl, sift All Purpose Flour with Baking Powder and Salt .
  •  Combine Flour mixture (in batches) in Butter Mixture to form a soft dough.
  • Wrap dough in plastic wrap and let it rest for 15-20 minutes.
  •  Knead dough once again and divide into equal portions.
  •  Roll each portion into a smooth ball with no cracks and place on a cookie sheet lined with parchment paper or lightly greased foil. Leave ample space between dough balls. If you want add the chopped pistachio piece and press very lightly so that they stick to the dough. Be sure not to flaten the balls as we are making them dome shaped 
  •  Bake for 20-25 minutes . Do check them occasionally as have to remain white .
  •  Remove from oven and let the nan khatai cool for 5 minutes before transferring to a cooling rack to cool completely.
  •  Store in an air tight container at room temperature.

Tips
  • You can also make these cookies in traditional way by making them with 1/2 cup ghee instead of butter .
  • You can add 1/4 tsp of gram flour and 1/4 tsp of fine semolina to make them more crisper .
  • Make sure to keep these cookie’s white and not brown them.
  • If you want to make them flat then roll them and press them a little . While baking they will spread and become flat.
This was the first flat nankhatai i baked when i was a non- blogger πŸ™‚

This blogger has a lovely blog with great recipes and awesome clicks :). She is a very close buddy of mine . She is so very kind hearted and so encouraging . What ?? still wondering whose this person.. She is my very gud buddy +Divya Prakash  author of “Divya’s Culinary Journey” . Thank you so much divya for encouraging your cousin and sending me “Dharshana Ram”. ‘s recipe for my event. Dharshana Ram is going to share a yummy dessert recipe today. Thank you dharasana for being a part of this event. So lets quickly chit chat with our new participant πŸ™‚

I am Dharshana Ram from Bangalore . I graduated in Civil Engineering and am currently pursuing my hobbies at home such as stocking flowers, quilling, card making, clay dolls, silk ribbon embroidery and of course baking and cooking. Kitchen Tips
  • To get soft idlies  wash , soak urad dal and keep it in fridge till you grind it and you can use that cold water for grinding .
  • While frying okra you can add a teaspoon of rice flour to make it crispy.

Introduction
I had tried the banoffee pie once at a restaurant and ever since I thought of making this at home. I found the richness of the banana with condensed milk to be very exciting. And the layered presentation to be very eye catching.
Serves : 2
Ingredients
Condensed milk – 1 Can
Digestive crackers/Marie biscuit – 5
Butter – 1/4 Cup
Whipped cream – 1/2 Cup
Banana – 2
Grated chocolate to decorate
I had refered to the below blog for the receipe and derived it to make a serving for 2.

Method of Preparation

Making of Dulce de Leche
  • Take a heavy bottomed deep and wide pan and fill it with 3/4 th water and boil it. Leave the unopened condensed milk can and boil it for 3 hours in simmer.
  •  Ensure that the can is totally immersed in water throughout.
  •  Longer the boiling duration, thicker the consistency of the dulce de Leche will be. Cool the container to room temperature and leave it in refrigerator till using it.

Base
  • Powder the biscuits and mix it with the butter. This is the base of the pie.
  • Whip the cream until we get soft and stiff peaks, either with hand or electric mixer.


 Arranging
  • Layer and set the powdered biscuit mixture in equal amounts in 2 glasses.
  • Spread the Dulce de Leche as the second layer
  • Slice the bananas and place it over the Dulce de Leche
  • Spread the whipped cream on top of the banana layer
  • Decorate with grated chocolate/cocoa powder finally
  • Set in fridge until served
Notes 
  •  Whipped cream can be replaced with vanilla icecream as well.
  • Refer online for different ways of making Dulce de Leche
  • Avoid opening the can of condensed milk when hot
