Vegan thursday

Baby Corn Peas Masala

India is famous for its N number of gravies and choices of curries it provides to accompany the breads.Some are tomato onion based , some our curd based My family and H always love the onion tomato based gravy for any curry . This is one of his fav curry which i make for his lunch . This is super flavourful and yummy gravy which just tastes delicious and super yumm. If you are not a big lover of paneer mutter you can substitute paneer with baby corn and this will turn in to a delicious dairy free – A vegan gravy .

My mom used to make this gravy a lot , they taste extremely yummy when served hot with hot phulkas / Roti . I don’t get fresh baby corn near my place so I used the canned one but they taste more yummy with fresh baby corn too. Lets move to the recipe of this vegan curry. 

Vegan Indian Curries

Vegan curries with vegetables

Ingredients


Baby Corn – 10 – 12 No ( I used can. If you are using fresh baby corn pressure cook then for 2 whistles )
Fresh Peas/ Mutter- 1/2 cup 
Onion – 1 no Medium  ( sliced)
Tomato – 2 no Medium ( chopped)
Green chillies – 2-3 No
Bay leaves – 1 No
Cloves – 2 No
Cinnamon stick – 1 No
Cardamom – 2 No  ( Whole)
Ginger garlic paste – 1 tbsp
Red chilli pd – 1 tsp
Turmeric pd – 1/4 tsp
Coriander pd – 2 tsp
Cumin pd – 1/4 tsp
Garam masala – 1/4 tsp
Oil – 2 tbsp + 1 tsp 




Method

  • In a sauce pan heat 1 tsp oil saute the onion and green chilli . Saute them till onion turn translucent.
  • Add tomatoes and cook them till the tomatoes turn mushy .
  • Turn off the flame and transfer the sauteed onion tomatoes in a blender .
  • After they cool grind them in to fine paste.
  • In a sauce pan heat the rest oil , add bay leaf, clove, cinnamon,cardamom .
  • After they pop add ginger garlic paste and saute for a while.
  • Then add tomato onion paste boil them, after they boil add the dry masala – Red chilly pd , turmeric pd, coriander pd , cumin and garam masalaand saute them .
  • Add the tinned baby corn / Boiled bay corn  and Peas let them boil in the masala paste .
  • Add water if necessary to get the gravy like consistency.
  • Cook the veggies till done in the gravy and oil separates in the corner ‘s of the gravy .
  • Serve this gravy hot with warm phulkas/ Roti .

Quinoa Pongal

 Today am here with an a very healthy and delicious tiffin with a twis. Pongal is my all time fav tiffin and I love prepare  this one pot meal  which is packed with nutrition . To add some more healthy benefits to our traditional South Indian pongal I have used Quinoa in this. As per wiki Quinoa is a  a grass family grain  which is related to beetroot , Spinach and tumbleweeds. This is a very healthy protein packed grain which has so many healthy benefits . As they are gluten free they are idle for people who are looking for a gluten free grain option . Perfect grain to substitute instead of rice for those who are calorie conscious. It was a random thought I got of using quinoa instead of rice and they turned to be a very delicious pongal and different from usual pongal . Seeing the healthy benefits No one can resist including this in the menu and serve  our family with a healthy tiffin right ? ..So for today’s Vegan thursday I got this very healthy and delicious  pongal.  You can check the other members in this  group – “Vegan Thursday” Here.

Ingredients

Quinoa – 1/2 cup
Moong dal – 1/2 cup
Pepper corn – 1tsp / Pepper pd – 1/2 tsp
Green chilli – 3 No
Cashew nuts – 2-3 No
Mustard seeds – 1/4 tsp
Cumin seeds – 1/4 tsp
Urad dal – 2 tsp
Curry leaves – 1 sprig
Turmeric pd – 1/4 tsp
Ghee/ oil – 1 tbsp ( I used olive oil )
Salt to taste

Method

  • In a pressure cooker heat ghee / oil add mustard seeds , cumin seeds.
  • After they splutter add curry leaves urad dal , cashew  and saute till they turn light brown.
  • Add green chillis saute then add quinoa and moong dal add 4 cups of water .
  • Add turmeric pd , salt and mix them well .
  • Cover the lid and put on the whistle , cook it in medium flame for 4-5 whistles.
  • After the pressure completely subsides in pressure cooker open the lid .
  • Serve this healthy pongal hot with coconut or any  chutney , sambhar  and enjoy.

Tips

Dabeli

Dabeli is a maharashtrian spl chaat which is becoming my most favourite chaat a very easy to make , the list of ingredients would sound that there is lot of work to do but once to have gathered all the ingredients it is simple to assemble and enjoyed .It is very much popular in maharashtra and also gujarat .This is a  spicy snack made with boiled and mashed potatoes with dabeli masala and sandwiched in a pav bun with some additional ingredients and chutneys added to it and garnished with pomegranate. Even though I haven’t totally followed the traditional dabeli recipe I got so much compliments for this from my neighbours with whom I share this and also H loved it a lot .

As this post is dedicated for vegan thursday I would like to mention that this dabeli is totally vegan , even the buns i used are potato rolls and the package said it doesn’t contain milk in it. So this a spicy treat for vegan food lover and perfect snack .I also haven’t used dabeli masala instead i used pav bhaji masala and the taste was absolutely delicious but next time I make will try it with dabeli masala too.   You can check the other members in this  group – “Vegan Thursday” Here.

Ingredients

Potato Rolls / Pav / Buns ( I used potato rolls and this makes it vegan )
1/4 cup sev 
butter ( optional if roasting the buns)
1/4 cup Roasted peanuts
1/4 cup pomegranate
3 tbsp Khajur imli ki chutney
3 tbsp Garlic chutney 
1/4 cup onion 

For the filling 
2 -3 Medium sized potatoes ( boiled and mashed )
1 sprig curry leaves
1/4 cup Onion  ( chopped)
1 small tomato ( chopped)
1/2 tsp ginger garlic paste
2 tbsp chopped Coriander
1 tbsp Pav bhaji masala / dabeli masala
1/2 tsp red chilli pd
1/4 tsp  Turmeric pd
1/4 tsp cumin pd
1/2 tsp coriander pd
Salt to taste
1 tbsp Oil


For Garlic chutney 

7 -8 garlic cloves 
1 tsp red chilli pd
1/4 tsp turmeric pd
1/4 tsp mustard seeds 
salt to taste

For imli khajoor ki chutney


1 cup tamarind 
1 cup dates 
1/2 cup jaggery / sugar
1 tsp Red chilli pd 
1/2 tsp fennel seeds
a pinch of salt
a pinch of black salt (optional)

Method


For garlic chutney

  • Peel the garlic and chop the tomatoes.
  • Put all the ingredients except oil and mustard seeds in a blender and grind it to a fine paste.
  • Heat oil in a pan add mustard seeds let them splutter add the ground paste .
  • Now cook the paste till the mixture leaves oil in the sides of the pan .
  • Garlic chutney is ready.

For imli khajoor ki chutney

  • In a saucepan take dates and tamarind with 3-4 cups of water and boil them for 20 – 25 mins till you can’t see any dates.
  • Add the jaggery/sugar, red chilli pd , fennel seeds, to the mixture and boil them well till the the jaggery/sugar dissolve .The mixture should have combined well and become a little thick.
  • Add salt and black salt to it and mix well.
  • Cool and strain the mixture with the help of a sieve .
  • Use as required and store the rest in refrigerator .

For Filling 

  • Heat oil in a pan add curry leaves , onion , ginger garlic paste and saute till the onion turn translucent.
  • Add tomato and saute till they turn mushy.
  • Add the redchiii pd coriander pd , turmeric pd , cumin pd , salt , pav bhaji masala  , mashed potato  and mix them well till they combine well.
  • Add coriander leaves , switch of the flame and add lemon mix well once again .
  • Taste for spice level and salt if needed you can add some more .

To assemble 

  • In a wide bowl add a layer of potato masala , then some chopped onion  , drizzle some Tamarind/ imli chutney .
  • Add  some Peanut ,again layer them with potato masala drizzle some garlic chutney, some onion ( chopped) ,some  pomegranate and garnish them with sev and chopped coriander leaves 
  • Now if you want you can roast the buns but i didn’t .Take the bun ans slice them half way thru .
  • Then apply garlic chutney in one side and imli ki chutney in other side .
  • Now scoop 3 tbsp of assembled filling or more as you like and stuff it in the buns then top it with little roasted peanuts , pomegranate , sev and coriander .
  • Warm it up in microwave or roast on a tawa in very low flame to just warm them up ..
  • serve them warm , have a big bite and  enjoy this delicious dabeli .
Tips
The chutney proportion depends on the the individuals taste you can add less or more.

Raspberry Gulkand Rose Smoothie

Today am here with an refreshing smoothie pink in colour and yummy in taste πŸ™‚ This was my H ‘s birthday special smoothie which i made for him. This is such an flavorful and delicious smoothie which is a filling for breakfast or if you don’t have tea or coffee this is what should be trying πŸ™‚ My h liked this delicious smoothie πŸ™‚ . This smoothie is an coolant to bare this summer heat. Lets Move on to the recipe quickly and see how to prepare this easy and delicious smoothie πŸ™‚  

Ingredients

Raspberry – 1 cup
Gulkand – 1 Tbsp
Rose syrup – 2 tbsp
Whole Milk – 1 1/2 cup
Sugar – If needed (optional)

Method

  • In a blender add Raspberry gulkand and grind them frist in to puree then add milk and rose syrup and give them a quick pulse.
  • Now our quick and delicious smoothie with completely different combo is ready to go in to your tummy πŸ™‚
  • Have them chilled or with lots of ice cubes in them.
Tips 
  • Sugar is optional as gulkand and rose syrup both adds  the required sweetness to this smoothie
  • You can even top them with vanilla ice cream and enjoy

Watermelon Papaya Juice

It was a hot day and i didn’t have any milk left in my refrigerator in morning so made this delicious juice for my h’s breakfast. Its so delicious and nutritious and my h liked it a lot. This combo was an accident you may say πŸ˜› I had only two fruits left in my fridge so combined both to make a delicious juice and a filling one πŸ™‚ lets move on to the delicious recipe of this quick and easy juice and this i made for Vegan Thursday  this  week πŸ™‚

Ingredients

1/2  ripe papaya
5 large cubes watermelon
juice of 1 small lime
1/4 cup water

Method

Add the fruit and lime juice to a blender and blend well, then add water bit by bit to thin to your desired consistency and enjoy! Thats it you easy pessy delicious juice and breakfast juice is ready to go in to your tummy πŸ™‚

Mango Orange Sharabat

This is an delicious and yumm drink which is one my favorite and people living in india may be knowing mazza drink this juice just taste the same like . Drinks are the best way to beat the heat and we feel refreshed after roaming  around in a sunny day and having a chilled glass of drink. This is one such drink which can be prepared  quickly and taste so yummm .. Lets Move on to the delicious drink recipe .. This is an awesome drink and nutritious vegan one . So this my share for  Vegan thursday πŸ™‚ 

Ingredients

4 Orange chilled
1 Mango chilled
1 tsp sugar (adjust to your taste)
2-3 mint leaves

Method

  • Juice 4 chilled oranges and pour into the blender.( juice the orange using  an hand juicer) 
  • Add the flesh of 1 chilled mango, mint and blend until pureed. 
  • Don’t add any water if you feel the juice a bit thick then add more orange juice to it and blend them

Note

  • Transfer to a jug and cover with plastic wrap. 
  • Keep in the fridge for up to 2 days.

Apple Sauce Chocolate Muffins For ” Vegan Thursdays”

We a group of food bloggers started a new event and named it as “Vegan Thursday”, This event starts from today .The main  motto of this event is to share vegan dishes from any cuisine. Most of our Indian foods are vegan, Obviously most of our daily routine foods we make eatare vegan without our knowledge. products, eggs, and any animal derived substances like honey. So we a bunch of food bloggers will be showcasing our vegan foods during thursday’s this event will be held twice a month. We will be posting the first week’s Thursday and last week’s Thursday of every month .This vegan Thursday  don’t have any theme and the choice of recipes prepared by each blogger being part of this event depends  upon their choice.

Vegan-ism means abstaining form the use of animal products. Vegan peoples don’t use dairy products,Eggs and other animal derived substances like honey. So we a bunch of food bloggers will be showcasing our vegan foods during thrusdays, This event will be held twice a month. Today am going to share and start this thursday with vegan chocolate muffins. Yes, today’s recipe is free from any animal product its an “Applesauce Chocolate Muffins”. This is my own innovation and experiment i did yesterday. Glad that my H and loved this muffins which is perfect for tea time and also a good filler. I used fat free apple sauce to make these scrumptious muffins they where super moist and we loved it a lot. So now i don’t have to depend on milk and milk products any more to bake my cakes, cupcakes and muffins.
Difference between muffins and cupcakes is just that if we frost its cupcakes and muffins are served as is and not frosted. So these can be turned to cupcakes by frosting them with any frosting. So here is my first recipe for are “Vegan thursday”  – “Applesauce chocolate Muffins”.


Ingredients

Maida/All purpose flour – 1 1/4 cup
Baking powder – 1 tsp
Baking soda – 1/4 tsp
Oil- 1 1/2 tbsp
Powdered sugar – 3/4 cup
Applesauce  – 1 1/2cup
Vanilla essence – 1 tsp
Cocoa powder – 3 tbsp


Method

  • Preheat oven to 180 C for 10 mins.  Sieve maida with baking powder ,baking soda and cocoa at least twice and keep aside. 
  •  Add vanilla essence, sugar  and give a quick stir.Add apple sauce little by little to the batter and mix them well with out any lump formation.   Now your  batter is ready.
  • Meanwhile grease or line the muffin tray with muffin liners. Divide and fill 3/4 th of the the muffin liner’s with batter . Note: You can even use your Ramekins to bake these muffins.
  •  Now bake the Muffins at 180 deg C/ 350 F for 40-45 mins or until a fork or tooth pick  inserted at the center of the muffins comes out clean. Cool down the muffins for 10 mins and enjoy these vegan delights . 
  • For garnish i dusted some icing sugar on top of the cupcakes.


Tips

  • Dry fruits or nuts can be added to this cake .
  • You can also make vanilla flavor by just skipping the cocoa pd and adding extra maida / all purpose flour instead.
