Bread Upma

Am here with a very simple , easy and yummy upma made out of bread. If you have leftover bread then this is yummy recipe which you can make in jiffy. May it be for breakfast or for snack they they taste  delicious any time in day πŸ™‚ . This recipe is from Homely foods . Thanks for this delicious upma +Meena B  πŸ™‚ Loved this upma steaming hot πŸ™‚ .

Ingrdients

6-7 Bread slices
 1 Onion finely chopped 
2 Tomatoes finely chopped 
1/2 cup Grated carrot 
3 tbsp Pea
1/4 tsp   Mustard seeds 
1/2 tsp urad dhal
1/4 tsp Turmeric powder  

1 tsp Coriander powder
1/2 tsp Red chilli pd
1/ 4 tsp Cumin pd

2 sprigs Curry Leaves
1 tbsp oil 
1 green chilli chopped 
Salt to taste  
Red chilli powder 

For garnish
2 tbsp chopped Coriander/cilantro leaves 

Method

  • Cut the bread slices in to cubes (Remove the brown part) . 
  •  In a  pan  heat oil,  add mustard seeds,urad dhal let them splutter and add curry leaves, green chilli.  
  •  Add  chopped onion pieces and saute them till they are transparent . 
  • Then Add chopped  tomato  and saute till they well cooked and mushy . Add salt , Red chilli pd, turmeric pd, cumin pd, coriander pd and mix well. If the mixture is too dry you can add few tbsp’s of water.
  • Add the bread slices and stir till it is nicely covered with  all the masala’s.   
  • Garnish bread upma with coriander leaves to garnish and serve hot.

Potato Onion chutney

Have you ever tried to make a chutney with potato πŸ™‚ here i am with yet another delicious chutney variety.  This chutney is an yummy and easy accompaniment for idli /dosa. Potato  when added to any recipe makes the recipe more tasty so i tried it as chutney this time.   My H and I love this chutney a bit spicier and this chutney has to be served warm πŸ™‚ Lets move on to one unique chutney recipe πŸ™‚

Ingredients

Boiled Potato – 1 large
Onion /shallots- 6-7 cup
curry leaves 1/2 cup
Green chillies- 2 no (i like spicy so added 2 chillies you can reduce )
salt to taste
oil- 1 tbsp

To temper

Mustard seeds – 1tsp
Urad dhal – 1tsp
Oil -1tbsp

Method

  •  Heat oil in a kadai/ skillet . Add the small onion/shallots and saute.
  • add green and curry leaves saute them
  • add boiled potatoes and saute for few minute.
  • Turn off the heat and let them cool
  • Grind it in blender to a smooth paste.
  • In a skillet heat oil , add mustard and urad dhal.
  • Now add the prepared paste and stir well if the mixture is too thick you can add water to it.
  • Bring them to boil and then turn off the heat.
  • Serve this chutney hot with idli/dosa.

Cooking Tips


 For adding richness to a dish, try using skimmed milk, cashew nut paste or poppy seed paste instead of the regular coconut milk or cream.

Introduction

 This rice is authentic to Tamil Nadu, and is also a Hindu Temple food. It is a combination of rice, dal and various vegetables cooked with freshly prepared  spice powder and tangy gravy. It is also called as Sambar Rice.

Ingredients

Rice – 1 cup
Toor dal – 1/2 cup
Mixed Vegetables – 2 cups (I used Carrot, Beans, Peas, Brinjal, Drum sticks, Pumpkin, Potato, chow chow, yam, capsicum)
Boiled Peanut and Chenna – 1/2 cup
Oil – 1/2 tsp
Mustard Seed – 1/8 tsp
Curry leaves – 1 string
Salt to taste
Turmeric Powder – 1/4 tsp
Hing – 1/4 tsp
Tamarind Paste – 1 tsp
Cilantro for garnishing
Sesame oil – 1 tbsp
Ghee – 1 tbsp 

Spice Powder 

Urad Dhal – 1 tsp
Channa Dhal – 1 tsp 
Black Pepper – 1 tsp
Coriander Seeds – 2 tsp
Fenugreek Seeds – 1/4 tsp
Red Chilies – 4
Coconut grated – 1/2 cup

Dry roast all ingredients except coconut. Grind them with little oil and coconut.

Method of Preparation

  •  Cook rice and dal in pressure cooker. It should be well cooked. Mash it with spatula.
  • Cook all the vegetables and keep it aside.
  •  In a pan, Add little oil, mustard seed. hing, and curry leaves.
  • Add cooked vegetables and boiled peanut and chenna along with its water.
  •  Add tamarind paste, salt, turmeric and ground spice powder. cook them for 5 to 10 minutes.
  •  Add cooked toor dal. Mix it well. Sambar is ready.
  •  Now mix sambar with rice.
  • Add sesame oil and ghee. mix it well. Garnish with cilantro.
  • Serve hot with papad or raita.

Variation

You can also make sambar rice without adding coconut.

Introduction 

This is one of my favorite vegetarian dish as it is very easy to prepare…A very common dish to keralites..The basic ingredient is an inevitable one in Indian kitchen…RED SPINACH…So the name of this dish is “RED SPINACH THORAN “….Ofcourse, u can try this using green spinach too…So letz start…

Ingredients

Red spinach/chuvanna cheera – 1 bunch ( finely chopped)
Coconut (grated) – 1 cup (tea cup)
Garlic – 2 pods (chopped)
Green chilly – 2 (chopped)
Shallots/cheriya ulli/chuvannulli  – 2 pods (chopped)
Cumin seeds – 1/4 tsp (small)
Turmeric powder – 1/4 tsp (small)
Mustard seeds – 3/4 tsp
Curry leaves – 1 stalk
Red chilly/vattalmulaku – 1 no
Black gram dal/uzhunnu parippu – 3/4 tsp
Oil – 2 tsp
Salt – for taste

Method of preparation 

  •  Wash the leaves well..Drain it and chop well.
  • Grind ingredients two to six in a grinder and keep it aside.
  •  Heat oil in a kadai and put mustard seeds..let it splutter
  •  add red chilli, curry leaves and saute for 2- 3 seconds
  •  Add black gram dal and saute well for few seconds
  •  Add the grinded mixture and saute well till it becomes light brown.
  •  Now add chopped spinach leaves and mix well.
  •  Add salt and stir well.
  •  Cover the kadai with a lid and cook for some minutes in low flame..
  •  Off the flame and serve with hot rice.

Pani and Raw banana stuffing for Golgappas (Come On – Lets Cook Buddies) Entry 46

Here am with another recipe which was shared by by my dear +Sneha Jain  :)..Thank you for the delicious and yummy ..all timefav pani puri recipe for us +Sneha Jain .Lets move on to this delicious street food recipe . Golgappas / puri for pani puri was already shared by sneha in a separate post as an separate entry  . Now here is the recipe of pani and stuffing for golgappas πŸ™‚ Let s move on to the recipe ..

Introduction

The complete dish comprises of a crisp hollow semolina puri filled with sprouts or hot ragada, boiled raw banana/ channa & spring onion leaves (instead of potato) stuffing, tamarind chutney and chilled mint flavored water.

Ingredients 

1/2 cup Tamarind  Pulp 
2 cups Water
 2 tblsp roasted Cumin Seed Powder
1/2 cup Coriander Leaves 
 4 Green Chilly  
1 cup Mint Leaves 
 1 tbspn Black Salt 
Few drops lemon juice
1 tspn Paani puri masala
 2 tblsp crushed Jaggary 
Salt to taste

Method Of  Preparation

  •  Grind coriander, mint leaves and green chillies to make a fine paste.
  •  Mix all the ingredients of the paani along with the green paste.  Adjust the spices and tanginess according to taste. 
  • Strain through a wire strainer to remove any rough bits.
  • Keep in the refrigerator for 2 -3 hrs before serving.

To Make The  Raw Banana Stuffing


1 boiled Raw banana 
1/4 cup Boiled Moong 
1/4 Boiled Channa
1 tspn paani puri masala
Salt to taste
1 tsp Chilly Powder

Method Of  Preparation

  •  In a bowl smash boiled raw banana, add all the other ingredients or can keep raw banana separately & moong/channa together mixing the masala’s 50-50.

Enjoy homemade pani puri or golgappa or puchkas

Hara Bhara Healthy Halwa (Come On – Lets Cook Buddies ) Entry 45

Here i am with yet another recipe being shared for my event πŸ™‚ So happy to post all the yummy recipes which non – blogger’s  have dedicated to this event and where working sharing interesting recipes here πŸ™‚ Lets move on to today’s recipe . Today’s recipe is being shared my dear +Sneha Jain. This is an delicious and yummy dessert . Thank you +Sneha Jain  for sharing this yummy delicacy .

Introduction

 As the name goes, we gonna make Greeeeen Halwa ! Go Green ! We shall use bottle gourd & make a healthy halwa. This is a different way to use this vegetable. I am not adding Khoya, milk maid which are processed foods. Shall use the natural & always available things yet make tasty & healthy one.

Ingredients

 2 cups grated bottle gourd
 1 cup Warm Milk
 4 tbsp Ghee
  Β½ cup sugar
  2 pinch Cardamom powder
  2 tsp Ghee roasted dry fruits (almonds & cashews)
  Green food color (optional, not used here)

Method of Preparation

  •  Peel the bottle gourd & grate it.
  •  Heat ghee in a heavy bottomed pan, add the grated bottlegourd & sautΓ© for 20 mins. Keep stirring in-between (until the raw flavor completely cooked & its becomes much tender)
  • Now add warm milk & add food color if needed.
  • Cook for about Β½ an hour, stirring in-between till all the milk is absorbed and halwa becomes dry.
  • Then add sugar & mix well. Cook for about 5 mins.
  •  Add roasted nuts & cardamom powder, mix & serve hot.

Tips

  • Always use heavy bottom pan, otherwise halwa will stick to the bottom of the pan and it will burn.
  •  Keep stirring in between while making halwa.

Cooking Tips

If you put few cloves in the nuts(cashew,badam) jar they will stay fresh for longer time.

Introduction

Banana Bites (Wrap) is very healthy and kids friendly recipe. It is perfect for breakfast. Since I don’t have tortilla , I prepared this recipe using chappathi.  Fruit Hot dog and Fruit Sushi for Vegetarians.

Ingredients

Banana – 1 medium size
Flour Tortilla – 1 medium size or Chappathi (Indian flat bread)
Peanut Butter (or) Almond Butter (or) Nutella (refridgerate for 30 mins )

Method of Preparation 

  •  Make a chappathi and let it cool completely.
  • Spread Nutella over the chappathi. ( Nutella acts as glue).
  • Place the banana at one edge. Wrap it (tight) and then seal the other edge using some extra nutella.
  •  Cut it into pieces and Serve. 

Variation


For even better taste, use tortilla and peanut butter for this recipe.

Kesar Lassi (Come On – Lets Cook Buddies) Entry 43

Here i am with another yummilicious entry for my event πŸ™‚ Am back with my dear buddy +Sneha Jain  for sharing her recipe she got for us today. Am sure if you are following my event “come on – lets cook buddies” entries  then you will surely know all the event participantes .Thank you sneha for sharing such delicious recipes and this drink looks yummm my fav too πŸ™‚ Lets move on to today’s drink which sneha has got for us πŸ™‚

Introduction

Lassi is a popular and traditional yogurt-based drink which originates in the Punjab region. Today we shall add on Saffron & cardamom flavor to it & make it a cool summer quencher .

Ingredients 

1 cup Yogurt (chilled)
2 tbsp Sugar (adjust to taste)
2 to 3 strands Saffron
2 pinch Cardamom powder
1 tsp grated almonds

Method of preparation 

  •  Soak saffron strands in warm milk. Crush it well till the flavour is well mixed with milk.
  • Blend the chilled yoghurt using blender.
  •  Add sugar, cardamom powder and saffron soaked milk and blend it again till frothy.
  •  Top it with grated almonds & serve chilled.

Variations

 Can add mango pulp for a different flavor & enjoy fruit lassi

Tips

 Do not add water and use thick & chilled yogurt for a creamier lassi.

Thanks to +Shama Nagarajan  of “Easy cook recipes” a very lovely blogger  for encouraging her non blogger friends to take part in my event πŸ™‚ This lovly looking recipe is shared by +Shama Nagarajan  friend Vasanthi srikanth . As you know her already she had submitted a chocolate pudding . Thanks vasanthi for sending delicious and interesting recipes and being a part of this event πŸ™‚ Now vasanthi has got an very attractive recipe to share. Lets Move on the recipe with out any further ado ..

Ingredients

Maida/plain flour – 250 g
Butter- 1/4 cup (Melted )
Condensed milk  – 1/2 cup
Baking soda – 1/2 tsp  
Baking powder – 1/2 tsp  

Method of preparation 

  • Preheat the oven to 180 degrees C .
  • Measure all the ingredients into a large bowl and mix well .
  • Divide the batter into 4 halves and add different food color with each half..
  •  Pour the mixture one by one in the baking pan and bake them in 180 C.

Health Mix Fruit Cake (Come on – Lets cook Buddies) Entry 41

Hey friends am here with another healthy entry for my event – “Come on- Lets Cook Buddies”  by +Aishwarya Srinivasan  . She has shared such an innovative dishes till now πŸ™‚ Here is another innovative recipe being shared by her which is adapted from my Ragi cake to which she has given her own innovative idea of using Sathu mavu/ Health mix instead of Ragi :). This sounds really interesting isn’t it . Now lets quickly see the recipe of this interesting cake . Over to aishwarya πŸ™‚ 

Introduction 

Health Mix Fruit Cake is the Healthiest recipe and Yummy too. Most of the kids loves Cake. In this cake, I used Health Mix ,Ragi and Soy Milk to give sufficient nutrition to kids.


Ingredients

1 cup All purpose flour
1/2 cup Nutrifirst Health Mix powder (I added 2 tbsp of ragi flour then filled the cup with Health mix)
1 cup Sugar
1 tsp Baking pd
3/4 tsp Baking soda
1 tsp Cinnamon pd
1/2 cup soy milk
2 bananas
3 tsp oil
vanilla extract 1/4 tsp
Cherries and  raisin 10
tutti frutti 1/4 cup



Method of Preparation

  • Sift the all purpose flour, baking soda, baking powder ,Health mix powder and cinnamon in a large vessel.
  • Take another vessel and add Bananas, oil,and sugar in it, beat the liquid mixture till the sugar is dissolved.
  • Preheat the oven to 350 F for about 10 minutes. Grease a round cake tin with oil.
  • Add the dry ingredients to the wet mixture and also add the soy milk little by little. Then add the dry fruits to that. mix it slowly.
  • Pour the cake batter into the greased cake tin and bake for 30 minutes or till the cake is done.
  • Check the cake by inserting a toothpick in it, if it comes out clean the cake is fully baked.
  •  Apply frosting and Enjoy the cake.



Variations

You can also make it as cupcakes and Ice-cream Cone Cake.
