Dalia House

Every mom has a trouble making their kids eat n kids eat only when it is attractive to their eye.Serve desi dalia(broken wheat porridge ) in an international style with vegetables and cheese, and your kids are sure to fall head over heels in love with it! Pour the prepared mixture into moulds of desired shapes and sizes, for interesting visual appeal. I am sure your kid will love this dish ..My daughter when she saw her dalia house in her plate she was very curious to try and liked it very much … Thanking god to give me such a cute lil precious gift – my daughter…

Ingredients

Kids Friendly Recipes
  • 1/2 cup broken wheat (dalia)
  • 1 cup milk
  • 2 tsp butter
  • 1/4 cup chopped onions
  • 1/2 tsp ginger-garlic (adrak-lehsun) paste(optional)
  • 1/3 cup finely chopped mixed vegetables(carrots, corn, French beans etc.)
  • 1/4 cup grated cooking cheese
  • salt and freshly ground black pepper (kalimirch) powder to taste
  • a few cream wafer biscuits , a few carrot cubes and a few french beans slices for the garnish

Method

  • Combine the broken wheat, ½ cup of milk and ½ cup of water in a non-stick pan and cook on a slow flame while stirring continuously till the broken wheat gets cooked. Remove and keep aside.
  • Heat the butter in the same pan, add the onions, ginger-garlic paste and sauté till the onions turn translucent.
  • Add the mixed vegetables and sauté for 2 more minutes.
  • Add the broken wheat mixture, remaining ½ cup milk and cook on a medium flame till the liquid evaporates, while stirring continuously.
  • Add the cheese, salt and pepper and mix well. Cook for another 2 minutes or till the cheese melts.
  • Remove from the flame and keep aside to cool.
  • When cool, divide the mixture into 4 equal portions and put each portion into a square shape cookie moulds and press it firmly. Unmould and keep aside.
  • Just before serving, make a roof using wafer biscuits, door using carrots and windows using French beans as shown in the picture. Serve immediately.

I am a spice lover and carve for spicy food. My H likes onion pakodas very much and ask for it every time when he is in mood to have snack. I researched for a perfect onion pakoda and ended up trying  my own recipe. Onion pakoda are a good tea or coffee time crispy and crunchy snack prepare in south India .  enjoy hot pakoda’s with a cup of coffee or tea or as it is !!!..

Broccoli Manchurian

Broccoli Manchurian

Today’s recipe is a Indo-chinese dish , Manchurian with a difference … yes !! “Broccoli Manchurian” . It was rainy day so i thought of making some spicy dish and got an idea of using broccoli in a unique way . Broccoli’s are high is vitamin c and blocks the growth of cancer cells.It may also prevent heart diseases, so do try this nutritious dish .  

Ingredients

Broccoli (seperated into florets)-1 small
Refined flour-2tbsp
Corn starch- 1tsp
Garlic (chopped)- 1 tsp
Ginger (chopped)- 1 tsp
Green chilli – 3
Red chilli paste- 1/2 tsp(optional)
Soya sauce- 1tsp (optional)
Tomato ketchup – 4tbsp
Salt to taste
Black pepper – 1/4 tsp
Spring onions (chopped)- 2 stalks
Oil for deep frying

Method

  • Chop 2 green chillies in a chopper or mixer. Add half the broccoli(seperated into the florets) and continue to chop. Transfer into a bowl, grate rest of the florets and add to the bowl.
  • Add refined flour,corn flour, black pepper pd, salt,  1/2 of the spring onion greens, garlic , ginger and mix well.
  • Shape the mixture into small balls with damp hands. Heat oil to deep fry the manchurian ball. Slide the balls into the hot oil and deep fry on medium heat till brown and crisp.
  • Heat 1 tbsp oil in a separate non stick pan  add the remaining ginger, garlic and saute.
  • Chop 1 green chilli finely and add along with soya sauce, tomato sauce, red chilli paste , salt.
  • Mix 1 tsp corn flour with two tbsp of water and set aside.
  •  Add 1/4cup water to the sauce in the wok and cook for two to three minutes.
  •  Drain the broccoli balls and add to the sauce . add  other half of  the spring onions greens and toss.
  • Add the corn flour mixture and mix well. serve hot garnished with the remaining spring onion bulbs.
Tips
  • No need to add water while making the Manchurian balls dough as broccoli as such contains moisture so it will not need water . Just keep on kneading it and you will see it forms nice firm dough. 
  • Soya sauce and red chilli paste are optional, if you don’t have these in your pantry readily available add red chilli flakes to the sauce.
  • To give it a complete chinese touch add 1/2 tsp vinegar, a pinch of ajinomoto to the sauce at the end .

Orange Blueberry muffin

Today’s recipe is a healthy , vegan and delicious dish – orange blueberry muffins . This recipe contains No egg, No milk or milk products and above all made out of whole wheat flour. I haven’t tried muffin even once so was searching for recipes in net and found this awesome recipe. This recipe is really healthy and tastes really good . As it is made of whole wheat flour it might not be fluffy and soft as of made from all purpose flour but its really nutritious and delicious when compared.


Orange Bluberry Muffins

 Ingredients


Whole Wheat Flour  –  1 and 1/4 cup

All Purpose Flour  –  1/4 cup
Baking Powder -1 and 1/2 tsp
Baking soda -1/2 tsp
Salt- 1/4 tsp
Sugar -1/2 cup
Orange Juice-  1 cup(freshly squeezed Orange juice)
Orange Zest-1/2 tbsp
Olive oil- 2 and 1/2 tsp
Vanilla essence –  1/2 tsp
Blueberries  – 1/3 cup (fresh or frozen)

Method

  • Preheat oven to 350° and grease muffin tin.

  • Sift together the flour,baking pd  salt and baking powder into a bowl.

  • Add 1 tsp of plain flour in blueberries; toss to combine.

  • In another bowl, whisk the orange juice,sugar, vanilla essence  together; add to flour mixture.Add orange zest , blueberries to the flour mixture.

  • Stir quickly just until all ingredients are moistened .

  • Spoon batter into prepared muffin tin

     fill about 2/3 of the muffin liner,

     dividing evenly.

  • Bake 20 – 25 minutes or until golden brown. 

  • Its done when the tooth pick pricked comes  out clear. 

  • When muffins are ready,cool them on a wire rack and serve.




I don’t have a muffin tin so made use of ramekin.I had some extra batter which i poured in bread loaf tin and made it  in to coffee time snack cakes .





Tips:
  • Can make these muffins completely with all purpose flour instead of using wheat flour if you like only soft and fluffy muffins. 
  • Can make plain orange muffins if u don’t have blueberries available.
  • Nuts (almonds , walnuts etc ) can be used to substitute blueberries.

Mango Badam Halwa

This recipe is  kid friendly and kids will carve for it if they r sweet lover.  My daughter who is not a sweet lover but still she liked this because of the heavenly taste . Badam are really good for kids as it contains very high Omega-3, should be included in your child’s diet if u want to raise a smarter kidoo 🙂  .. my mother used to tell me badam had with kali mirch (whole black pepper ) is so very good for our brain’s. I love to include fruits in my sweets and experiment different flavors, this makes the dish unique .

Ingredients

Badam- 1/2 cup heaped
Mango puree- 1/4 cup (thick puree)
Sugar- 1/2 cup heaped
Ghee (clarified butter)- 1/4 cup
Saffron strands – 1 pinch
Elachi powder – 1/2 tsp
Milk- 1/4 cup

Method

  • Soak the badam over night or 3-4 hours . peel the skin off n grind the badam with milk to a very smooth paste .
  • Heat a nonstick pan or a heavy bottomed pan add sugar and 1/4 cup water to the pan .After the sugar gets dissolved completely simmer the heat and add the ground paste to the syrup and mix it continuously to avoid lumps .
  • Add  mango puree ,saffron soaked in warm milk , elachi. keep on stirring for 4 – 5 mins.
  • Add ghee in regular intervals 1 tsp at a time and stir it well till it leaves the sides of the pan and is no more sticky in consistency .
  • Transfer it to a greased plate or a bowl . serve warm .

 

 

 

Tips
  • After your halwa cools down it gets thickened a little bit cool the mixture a bit and then have it  .If u feel that your halwa is still sticky then you can stir them again  in the pan and add some more ghee to it for getting the right consistency.
  • Halwa’s  consistency will be better if you cook them in medium heat throughout.

Made this yummy kheer for dessert and my hubby was very impressed hearing the name of the dish ..yes , “orange kheer” i would say a “khatta meetha ” kheer sounds really good right? but it tastes much more better. easy to make and unique..Lets see the ingredients ..

  Ingredients

Santre ki kheer recipe
  Milk- 1 cup (lowfat milk can be used )

  Orange – 1 medium sized
  Sugar- 4 tsp ( if  needed can add 1 more tsp)
  Pistachio – 1 tsp sliced (optional)
  Almonds – 1 tsp  sliced(optional)
  Cardamom pd- 1/4 tsp
  Saffron strand – 1-2

  Method

  • In a pan boil the milk in a low flame continuously stirring it for a while .
  • Now peel the orange and remove the flesh part of it (even the white pith should be removed).while removing the flesh part if the juices comes out that’s okay .
  • Once the milk starts changing its color add sugar, pistachio, almonds and cardamom pd.
  • Stir till the sugar dissolves completely n the milk is a little thick in consistency.Turn off the stove and let the milk cool completely . After the milk come to room temperature add the orange flesh in to the milk and give it a stir.Garnish with saffron strands.
  • Chill and serve.
  Tips

  • Remember not to heat the milk again after adding orange because it may curdle the milk n its not edible after which. serve it chill.

Eggless Pineapple Upside Down Cake

Hi Friends ,

 

             Today ‘s menu is a cake…Cakes are perfect dessert for any occasion  , Baking is my new venture and i just love to bake . Today’s dish is an american traditional  “Pineapple Upside Down cake” and i have made it indo -american  how? .. You will  know after reading this recipe ..

Ingredients :

Eggless Pineapple upside down cakeAll purpose flour – 2 cup
Corn flour – 2 tbsp
Butter at room temperature – ½ cup
Condensed milk (one can) – 1 can
Baking powder – 2 tsp
Baking soda – 1 tsp
Powdered sugar – ½ cup

Pineapple essence – few drops (optional)

For fruit arrangement at the bottom
Butter – 2 to 3 tea spoon
Jaggery powdered – ½ cup
Pineapple slices (cut into circles) – 4 no
milk / pineapple juice – 2 -3 tbsp

Method

  •  Cream together butter, powdered jaggery and spread evenly in the bottom and sides of greased baking dish.
  • Arrange your pineapple slices at the bottom above the creamed jaggery .
  • Sieve together all purpose flour, corn flour, baking soda, baking powder, salt and powdered sugar.
  • Beat well butter, condensed milk, pineapple essence and mix with sieved flour-sugar mix; add chopped pineapple pieces and mix well.
  • If you feel the batter is thick, add about 2 -4 tbsp of milk or pineapple juice. Now its time to pour the mix in the greased and pineapple arranged tray carefully.
  • Tap the cake tin once to remove the air bubbles if any.
  • Bake at 180 degree Celsius for 40 to 45 minutes.Again the temperature may vary according the oven you are using.
  • Insert a tooth pick to check weather it is baked fully.If the toothpick comes clean then your cake is done. Cool well and invert the cake on your serving tray.
  •  The yummy looking Eggless Pineapple Upside Down Cake is ready. Cut and serve.
  • Garnish it with cherry or strawberry or red grapes any thing u like.

 Tips:

  • In traditional pineapple cake they add brown sugar instead of jaggery , i have added jaggery to give a Indian touch .If you have brown sugar available in your pantry then you can use it.
  • You can even add glazed cherry in between the pineapple circles while arranging the pineapple circles in the baking tray (this is before baking) . This gives a pleasant eye appeal  to you dish .
